Last night ended up being Nachos, quick easy and on the table in about 30 minutes (including defrosting the meat)
Tonight I am on my own for Dinner, I would love some Potato Soup but not sure if I will have the want and ambition to make it once I am off work and get home. So more than likely I will end up with something quick maybe some eggs or a baked portabello stuffed with something out the fridge.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

You know how sometimes food just hits the right spot?
I just finished eating and that's what this supper did for me! Yay for simple and easy to boot!
I just added pepper and dill to canned tomato soup, added 1/2 water 1/2 milk. Took my portion out, then added salsa for husband's portions.

I bought boneless chicken breast on sale today, not our normal form of chicken, we normally use thighs (breasts can be dry, particularly without bones and skin). So tomorrow I'm trying a new recipe that a FB friend suggested: http://damndelicious.net/2014/04/23/...acker-chicken/

I don't use chicken breasts for meals either (other than when I am doing a mix of other pieces, or I sometimes roast some for sandwich meat).
My son, who is now on his own, learned why...
He bought a big bag of the frozen ones at WM - and discovered why they aren't the greatest thing. He tried doing a variety of different things with them, and just didn't like the results.
He's been doing pretty good in the cooking dept., so we had a talk about chicken pieces and why others are better to use. Then he says, Well, then that's why your meals always taste awesome!

I have a bad case of "all day sickness," so I nibbled on things throughout the evening. Fresh cheese bread with cream cheese on it. Vanilla Activia yogurt on plain Cheerios (it's quite yummy and I ate it this way before I was pregnant). Fresh broccoli flowers, peeled broccoli stem, and celery with Kraft ranch dressing. All this topped off with my vitamin. *shrug* I managed to get most of the food groups.

It would be too spicy for me as well, but I've used other recipes on that site. The chow mein one for NYE.
I used fresh chicken breasts for two of the dishes I made on NYE. They were cubed and quickly cooked for the chow mein and Chinese chicken curry.Last edited by padyofurniture; Sat, Jan 10th, 2015 at 07:50 AM.

I'm rethinking the firecracker thing, might be too hot for my guys. I think the sweet and sour might be better.
