..my beef stew turned out EXCELLENT!! yesterday..full of beef, fall apart tender & the seasoning was just right...have a little leftover so will just have that today..no cooking!! yay!

Change in plans last night, was not feeling the Chicken Stew so instead I pulled a BBQ Pulled Pork from the freezer which I had over Mashed Potatoes
So now tonight will be Chicken Stew over mashed potatoes but thinking of doing it more Sheppard Pie style so I can just toss in the oven when I get home for a quick and easy dinner.

...have a craving for sweet & sour pork with rice...have some peppers to use up and I froze some fresh pineapple when it was on sale so will probably make that (with mushrooms, onions, etc)..and there's a can of mandarin oranges in the pantry so sounds like a plan
