Was going to make Sheppard's Pie since Mom is working till 7 so I could eat early and she could heat up. But the weather did not co operate so instead well it was still cool this morning, I made Mashed Potatoes and Mushroom Gravy which I added Shredded Roast Beef I found in the freezer too so we can re heat that when we hungry/home.

Pork ribs, potatoes and corn.
If you haven't tried crock pot ribs, do it. Pork ribs get dry so fast. My mom used to boil the ribs and then barbecue them, but now she only uses my crock pot method because it yields super moist, tender ribs every time with way more flavor:
Basically just defrost your ribs until they're pliable, arrange them standing on bone end going around the outside of the crock pot and working your way in, so it looks like a rose from the top.
Mix barbecue sauce and a water (sauce will reduce, so don't worry about it being runnier at first), and any additional seasonings you want (chopped garlic is great, you can also add liquor, pop or brown sugar if you wanted to) and pour on top. Cook on high about 4-5 hours, basting exposed parts occasionally or flipping over. They're done when the bones can be pulled away from the meat with minimal effort.
This also works well for other cuts of pork.

Last night we had red baby potatoes, baby carrots, and yellow zucchini from my garden. I boiled the potatoes, we ate the baby carrots raw, bed marinated zucchini, celery, and mushroom kabobs, BBQ burgers, and BBQ'ed a fresh pickerel that my dad had caught that morning. We had cupcakes for dessert. It was our twins' first birthday. They were too tired, so they'll be opening their few gifts this morning. My dad and his wife are down for a short visit. They brought us a variety of bison, moose, and beef for our freezer for free.
