Open faced chicken salad sandwich made with Costco BBQ chicken. kale, onion, celery, grapes and mayo-on toasted whole grain bread. Usually I have it with spinach but did not have any so subbed kale. May sound weird but it is really tasty with the grapes in it-and I usually don't like fruit and meat mixed together.

Super C had a special on fresh beets with the leaves, 2 bunches for $3.00. So i picked that up and made a large pot of Borscth. I used 4 beets and their leave and stems (they were very fresh), lima beans, string beans, potatoes, carrots, celery, onions, garlic potatoes and of course dill and some chopped up fresh bacon. I know a lot of people eat borscth as a broth but my parents owned a small farm and we had plenty of fresh vegies so borscth always had nots of fresh vegies.
Anyway, thats what i had for lunch yesterday and thats what i had today for lunch. The rest i froze for winter. And tomorrow im mading another large pot of borscht and freezing it.

We met some good friends from out of town and went out for Indian food-delish. Too full still to eat the leftovers for dinner so maybe tomorrow.

Not much for lunch today, just some fruit: banana, peach, yellow plums.
