    Splurged last night with a PB Mediterranean pizza from Panago and I made a huge romaine salad with cucumber, green onions and loads of fresh raspberries I got at Costco with a herb vinaigrette.

    Not sure about tonight yet……..

    I bought 2 trays with very large Marc Angelo Italian ( uncooked ) meatballs on them, 6 to a tray...lol. Discounted at 30% off. They've been seared on all sides , broiler pan cooked through and now are simmering in sauce. The rigatoni is on full boil. DH sure LOVES his pasta meals so I'm surprising him with this for tonight! There may be wine!! tee hee

    Dinner is almost ready.

    Seasoned crusted chicken browned in cast iron then finished in oven-topped with mozz cheese and avocado. Fresh asparagus and sweet potato fries!

    For dinner we had thick sliced of Smoked Ham,Slices of Pineapple,mashed patatoes with maple sirup
    For dessert carrot cake with a cream cheese frosting or fruits muffins
    It was really good
    The goal is to live day by day not to much thinking hahaha !!!!
    I love to save money!!! Frugal life hahaah !!!

    We noshed on freshly baked ( nice and crunchy bottom! ) Focaccia Bread. I put black olives, sun dried tomatoes, roasted red peppers, pesto, fresh grated Parmesan cheese, Italian herbs and rosemary on it before baking. We also ate roasted green beans, asparagus and cabbage steaks. So weird not having a meat dish, but neither of us missed it? @harbie maybe you are having an influence on me! lol

    Now to just eliminate the dairy . But seriously meatless meals can be just as filling or rather more due to the amount of fibre and it’s cheaper too.

    Still cannot believe just 2 cups ( uncooked ) of the special Sushi rice can make so many California rolls! I ate almost half of this tray for my dinner
    ( with slices of ginger on each piece of course! ) and DS wiped out a tray earlier today. Still plenty left. On the inside I put oven baked coconut shrimp,
    mango, strawberries, carrot, red pepper, cucumber and leftover oven roasted green beans and asparagus.
    Still have a good supply of Nori sheets to make them another time!

    I have tons of Cherry Tomatoes thanks to the RCSS Tomato Deal last week. Decided on Mozzarella Chicken with Cheesy Garlic Naan and a Side Salad.

    Last night I made 2 things up. I really like giving the guys options. A broad egg noodle dish with PC Alfredo sauce, baby sweet green peas and sauteed chx chunks. I was rather miffed after mixing it all up and checking the bag and see that what used to be a 454 gram bag of noodles was now only 340 grams?!! The other 1/2 tray of the skl/bnl chx breasts I split through the middle, flattened all pieces with my meat hammer and made Schnitzel out of them.
    There are still bags of coleslaw and garden salad left so they can choose whatever they fancy as a side.

    No cooking for me tonight, going to a dinner party and bringing wine and a package of white chocolate fudge I made last night. Dh was playing pickleball last night so I took the time on my own to make fudge, double chocolate cookies and a carrot cake. I froze the cake for Easter to frost and decorate for Easter dinner.
