    Ham for the family..DD is bringing raspberry cheesecake and DS is bringing the veg. I am making the ham and a potato casserole as well as fresh buns.

    Tonight was a weird one. First a protein smoothie after our workout and then later the leftover pasta helper kinda deal with gardein and protein pasta with a garden salad.

    Made up a box of Cheemo perogies not realizing they were mini cocktail sized. SO CUTE!! Also boiled up some eggs for the guys.
    Tomorrow for work they'll be taking in luncheon meat on sub buns and a couple of eggs each. There's still a couple of servings left
    of the jicama/chayote squash/mango salad I made up yesterday.

    Modified a Cornish hen recipe ( I just used a package of chicken thighs ) that turned out scrumptious! The finished thighs went onto a bed of pineapple rice, with oven roasted thick orange slices, Brussel sprouts + green beans as sides. I made up 2 containers for the guys work meals today.
    The thighs marinated for 12 hours in a blend of Orange zest + juice, grated garlic, chopped fresh ginger, EVOO, Dejon mustard, wine, Balsamic vinegar, soy sauce and brown sugar.
    I pan browned the thighs first, then transferred to a baking pan to finish, basting every 10 min. veg were roasted later on the same pan.

    I've decided my guys will need a comfort pasta dish after working thorough this nightmare-ish cold.
    Only good part is TGIF! Two days off so they can thaw out...lol.
    French Onion Pasta Bake it is then! ( Pretty sure it was @SassyAshley I got this recipe from ) and
    it became a regular in our " what's for dinner " rolodex.

    I made a pasta dish last night but it was more because I was tired and hungry and I wanted something quick and easy. Macaroni pasta with white beans and broccoli in a cheesy nooch sauce.

    Tonight will be chili with 5 different beans and sweet potatoes. I think I have some kale leftover to finely chop and add at the end. Smells sooooooooooo good but I have to wait until Dh gets home…..

    I'm in the process of making this right now: Beef Barley Soup

    Pan-seared the roast that I am going to use in it, so should have a nice, smokey flavor the beef.

    @mulock Mmmm, that soup is one my DH makes regularly. He cheats by dicing up the meat from one of those precooked roasts.

    I confess last night I paid extra to upgrade my meal to 1/2 lobster with lobster mac and cheese, salad and asparagus-delicious but wont be doing that every night!

    Last night I made The Best Classic Shepherd's Pie - The Wholesome Dish for dinner. I'm really into the swing of things with winter-comfort foods for my household.
