Dispite the freaking hot weather last night I made a red&yellow tater salad with crispy bacon,shallots and baby peas
Not that we ate that much of it anyways so lots of leftovers tonight. I may brave the bbq again(I did the bacon last night on it) and do a grilled chix boob to go with the salad and an ice cold beer......or two

Chicken Fingers and Poutine, not the most healthy meal but it is homemade. Yeah for cooler weather allowing us to cook.

We're going camping tomorrow (fingers, toes and eyes are crossed for the rain to go away!), so I don't want to take something out or cook something that will provide leftovers. I saw an ad for frozen chowder mix for $1.99 a pound at Clearwater (very good fresh seafood store in my city). I went to get some to make a small amount of chowder, but it was nearly all bits of haddock, so skipped that. I got a couple pounds of mussels, and three fishcakes. Mussels were delicious - I tried putting a sprig of thyme and a sprig of rosemary from my herb garden into the water, which mostly bubbled up around the mussels. Didn't notice any flavour on them, lesson learned. DS probably ate at least half of them anyhow, he loves seafood. The fishcakes weren't great either, salty and mostly potato, they stuck badly to the pan and fell apart a bit despite my best efforts. I finished them off in the oven and ate them myself! DS was full of mussels and salad and didn't like the fishcakes, DH doesn't care for fish much (although does like mussels, he ate the rest of them).
The next two days, we'll be grilling my homemade burgers and some Grill 'Ems at our campsite. I bought a package of lean ground beef from Costco for the first time, seemed comparable to Sobeys sale price, made about 16 burgers (added chipotle seasoning, fresh ground pepper, bbq sauce, an egg and a bit of Italian bread crumbs before forming patties) and cooked what was left over, froze it all, some of the burgers will go camping with us. I'm going to cook some ham tomorrow morning too (a nice lean Cooks ham that I got at NF recently for $1 a pound).Last edited by Zonny; Mon, Jul 1st, 2013 at 07:00 PM.

I marinated some pork and stuck it on skewers with peppers, onions and mushrooms and hubby put in on the BBQ-served with brown rice and fruit for dessert.

Today thankfully it is about 12 degrees cooler so will make roast chicken, roast potatoes, carrots, broccoli and apple rhubarb crisp for dessert.
