Made gluten-free, protein-boosted, dairy-free banana pancakes. Topped with loads of fresh strawberries, grapes, and raspberries. Almost wanted to put coconut whipped cream on it but I knew that I don't have it pre-chilled and it would be too much for just me.

Sobey's deal - rotisserie chicken (best in the city!), macaroni salad, buns, for $10, plus potato salad we had.
Tomorrow, just me and my son, so I'm making tacos, yay!

Last night was Homemade Mac & Cheese and that was all.
Mom decided to make a large brunch and well by the time that was made we did not eat it until almost 2 so we weren't very hungry for dinner, so a dish of mac & cheese to split was more than enough. Oh and I had some Chapmans Caramel Sundae for Dessert.

Picnic/BBQ at the beach!! All my family is gathering there this evening and my brother & girlfriend are visiting..so prob pork chops, hotdogs and some salads. Its kinda cool here today so hopefully it warms up later!

Last night my MIL had us over and served homemade pizza as in homemade dough and her own spicy pizza sauce from her own tomatoes! Also a super yummy Greek salad with all the home grown veggies and dessert was wedding cake! Actually she is making a cake for a family's wedding and she used us as "guinea pigs" ahhhhhhh yummy guinea pigs

The weather turned here and more fog , rain & thunder.. so I have the oven full of pork & chicken wings, and I have a pot of new potatoes (just need to be scrubbed & washed) to go on the stove and some side salads (bought!) and I am going to make rice, etc..I love cooking!

Last night was a couple of ice cream bars to make up for the green salads I have been consuming lately. Tonight will be a $2.50 chicken wrap I got at RCSS. How can you tell DH is gone for 30 days again!!!

Tonight is steak, roasted potatoes, grilled corn, roasted cauliflower and sauteed onions and mushrooms. We are having a very veggie filled dinner.
Wish I had of known than I would have taken a sandwich for lunch instead of a salad and not felt guilty, trying to get more veggies in my diet and get on track with my eating better.

Ingredients:

1 cup 1% low-fat milk (skim may be used, but creates a thinner sauce)
1 1/2 tablespoons butter
1 1/2 tablespoons flour
3 tablespoons parmesan cheese
1/2 teaspoon minced garlic
1 dash pepper
Directions:

The key here is patience, add all ingredients gradually!

Melt butter in sauce pan on stove top with medium heat.

Gradually whisk in flour.

This will create a yellow paste.

Gradually add milk, whisking until incorporated and no lumps are present.

Continue to whisk until hot.

Usually 3-5 minutes.

The longer you cook the base (without the cheese) the thicker the sauce will be.

Add parmesan slowly, again whisking until incorporated.

Add crushed garlic and pepper.

Cook for 2 minutes or until cheese is melted.

Remove from heat.

Tonight was Costco night for my family. We're in a hotel tonight, four adults and two kids, so we ran up to Costco for two rotisserie chickens, potato salad, Cesar salad. Still have leftovers for tomorrow.
