Since I have been back I have made both a reg lasagna and the lazy version . Yesterday my mom and I spent the afternoon in the kitchen together (we haven't done that since I was a kid!) and we made the most amazingly delish soup with every root veggie and other veggies you can dream of (rutabaga, parsnips, leeks, bok choy,etc....) and a huge batch of Indian flavoured chili. So those will be our dinners for a bit. The best part was cooking again with my mom

Last night was some Grill'ems that needed to be eaten up as the package was open with some boil smashed new potatoes with a little butter and various spices (onion powder, garlic powder, seasoned salt and pepper) with a side of saute red and yellow peppers with mushrooms.
Now to figure out what to have tonight.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Last night was mini turkey meatloafs with min roasted potatoes and a green leaf salad.
Tonight since I have a hair appt in the evening we will get a pizza from Whole Foods - spinach, mushrooms, grilled zucchini, roasted red peppers, ham and mozza or gouda for cheese.

Tonight I am being super lazy and had the school chef prepare our dinner-my husband volunteers one day a week to help in the school kitchen which means our kids get free lunches and we get some free dinners too. So I am currently re-heating a roasting pan full of ribs, mashed potatoes, red cabbage and zucchini-he always makes good stuff and although he says the meal is for four people he must mean 4 very hungry people like Natalka's husband because we always have leftovers.

Tonight was glazed ham with homemade mac n cheese with a big salad with celery, peppers, carrots and ranch dressing. Not bad for not wanting to cook for just myself.

I cheated tonight and took the kids to McDonalds. I had a mcchicken and my daughter ended up stealing that and I ended up with her chicken nugget happy meal. dd2 had their grilled cheese happy meal.
When life hands you lemons, make a lemon pie... lemonade will be all like WTH?!?

Pork chops on the BBQ, with potatoes, turnips and carrots on the bbq also, plus i make some kapusta this morning, so will be having that also. And some sort of salad, probably tomato and onion.

Last night the guys had the leftover ground beef stuff, and with the leftover macaroni I made a cheap-o version of fakey mac and cheese (white sauce with cheez whiz and lots of garlic and butter), topped with cornflake crumbs and butter - it actually turned out pretty good (usually when I do stuff like that I don't make enough sauce); plus a salad with chopped boiled eggs in it.
Tonight - well, it's an experiment.
I remembered reading on here that someone did slow cooker ribs (or just meat?) by just putting in a bottle of Kraft BBQ sauce, so I thought I'd give that a try. Usually I boil ribs for broth to use for soup, then finish the ribs in the oven with sauces or spices I combine myself.
Usually I put in more sauce/liquid with meat or meat/veg in the slow cooker than needed, and end up having to thicken it at the end, so just by using the bottle of sauce (it just covers the meat) I hope it's enough.
(It's not like I'm leaving the house, I can check it anyway)
Anyhew... I'm using the pork button bones (regretting buying the 10 lb box, lol! - they are tasty, but a pain in the arse to eat around the little round flat bones, you have to kind of mince the meat you put in your mouth...), and since they are finger food, I'll make baked potato wedges with Italian spices, plus serving raw carrot sticks and cauliflower florets - so no utensils will be needed!

going to get some cheap carrots at Giant tiger, cut em up and steam em.. add them to the meatball/cabbage soup i made last night..

To night we had Teryaki style pork loin , stuffed zucchini and broccoli pasta ,
The pork was marinated in mustard, brown sugar, beef bovril and soy sauce, seared and finished in the oven.
Zucchini was stuffed with grated carrots, bread crumbs (smashed croutons lol) and a touch if cheese.
Noodles were mushroom broccoli and onions sautéed in butter and garlic and olive oil. Toss in pasta , a touch more olive oil a touch of chicken bovril salt and pepper .
It was AWESOME !

Not even sure what to call this lol.
Homemade naan, spread some black diamond sharp cheese spread in it and topped with seasoned ground turkey and my black bean and corn salsa. Roasted zucchini, carrots and broccoli for side.
