I hope you feel better soon Harbie ^^
This is what i made for lunch (i had to use the oil one more time so i can feel better throwing it out... we shallow fry in a pan)
i didn't beer batter.. just a standard onion ring batter... flour corn starch, egg, water, baking soda, salt and pepper... then coated in that mix and dipped into panko with a bit of seasoning salt... better than A&W's and all those rings were from half a med size onion... so they are dirt cheap to make.

I am going to try chicken thighs made with that new So Juicy mix ( I read somewhere on here it was really good!), stir fried sesame spinach with red wine vinegar and roasted carrots.

I fell asleep around 3 PM and didnt Wake up until 7:15 pm. I went to bed again at around 11:30 PM and sleep until 6:30AM. And i still feel tired. So tonight will be liver and onions menu.

Tonight I made tuna and bowtie pasta in garlicky mushroom sauce, with kernel corn - and eggs added on to fill up husband. Bless his heart, he's not a tuna fan, but eats it if I hide it...

Slow roast veal roast. "Roti palette" in French . I ways brain fart on how to say that in English ... Ill probably serve that with rice, veggies and a gravy made with the roast drippings .
I'm dying for a better idea than rice though.. DH and DD don't like potatoes and I LOVE them
And I'm sick of rice ...

Tonight I am making some baked panko coated pork chops with scallop potatoes with some fried peppers and onions.... dessert will be a quick and easy 5 minute oreo cheesecake << that is cheating I know... we never eat a big enough quantity of cheesecake to make it from scratch... so i buy the just add milk mix in bulk at the real canadian wholesale and divide it up... we make what we will use and tonight is is just me so that isn't much!
Who says you can't enjoy cooking for one?!?!?! LOL... my daughter is out tonight and I still wanted something good!Swagbucks, Earn 30 - $50 a month in surveys plus cash backs on your spending.
