Deer meat strips( marinated in jerky seasoning for 4 days) simmered in a brown gravy with onions, mushrooms and peas. Served over garlic whipped potatoes and garlic toast as a side.

last night was soft tacos and nachos.
tonight is slow cooker stew and i'll make my mothers peasant bread (very easy to make if you can get thru all the blabbing on the page). & i think i'll make ham and potato casserole (adding spinach that needs used) for tomorrows dinner today since i'm home (friday's are usually a gallyvant-around-and-go-shopping day for me, so this makes life easier when i get home tomorrow)

Last night was shredded Beef in Gravy over Garlic Smashed potatoes. WOW I seem to make this a lot lately but it is such an easy dinner for one and it is warm and comforting. Plus I was going to make pasta and some how this just seemed easier since I wanted to use pasta sheets to make roll up and they were all frozen.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Yesterday we had beef stew with red and sweet potatoes, carrots, celery, and rutabega. I have a whole chicken in the fridge waiting for me to do something with it. I'm thinking of boiling it up for salads and using some of the meat for a chicken, vegetable, barley soup tonight.

Shipwreck Casserole
----------------------
2 large onions, sliced thin
3-4 medium potatoes, sliced thin
1 pound ground beef - raw
1/2 cup long grain rice - raw
1 cup celery, chopped (or frozen mixed veggies)
salt and pepper
1 can condensed cream of tomato soup
1 can measure of hot water
Whisk these two together in a separate bowl.

Use a 2 L/qt. casserole dish or roaster.
Put onions on bottom, salt and pepper. Next the potatoes, then salt and pepper.
Pat the ground beef overtop, fit to cover potatoes, don't push down too hard on it. Sprinkle with salt and pepper (I add garlic powder, too).
Sprinkle on the rice, then the celery (or veggies).
Pour the soup and water mixture on overtop - you can poke meat with a knife so most goes through.
Bake covered at 350 degrees for two hours. (it seems like it should be done in an hour, but just isn't...)
(Can skim off grease around edges with spoon if you use regular ground beef)
I use ground pork too, and we find we like it better than the beef.
