    Looking at a recipe for one, I guess I've made the meat/veggie part separately, and just served over mashed potatoes.

    The last 2 nights has been homemade french onion soup, which I made for Mom as she loves it but I do not really eat it. Mom has now announced it is not enough to fill her up and since I did not make anything to go with it she won't be eating it. There is one more serving there hopefully she eats it as I am done with the soup, I was not expecting to have to eat the whole batch myself especially since I am not the one who likes French Onion Soup.

    Tonight is the only night this week we are both home for dinner, found some frozen homemade meatballs in the freezer. Think I will simmer these in a jar of Classico Sweet Basil Marinara Sauce and serve over the first box of pasta I grab.

    well I decided to split that lg package of ground beef up yesterday into 3 things. One 8" round meat pie with peas/onions but I only had 1 Tenderflake crust for the bottom and topped it with mashed spuds, sort of a " fooler Shepherd's Pie " ....t....next I boiled up 1 pkg. of those nice Ziggy's cheese Tortellini for DD, added a portion of the browned meat and some peas/extra Parmesan cheese to it, blended in some homemade pasta sauce. That left enough meat to make 2 large burgers which I'll grill tonight for the guys.

    Ah, so I'm Oh-So-Gourmet before my time!

    Tonight, I made oven-baked meatballs out of ground pork - added about two cups of leftover rice which had onions and carrots in it, plus added 1/2 head minced garlic, s+p, basil, oregano, a few slices of soaked bread, some breadcrumbs and an egg. They actually turned out great - got a huge WOW from my husband (I didn't tell him about the rice mix I added in).
    Served meatballs with shell pasta - had added in sauteed green onion tops, sliced cauliflower and sweetlet peas.

    Tonight dh and I cooked perogies with onion and roasted ham piece, served with sour cream and a glass of milk. It was pretty good. We had both had a long day at work.
