I had chicken fingers, fries, Caesar salad and garlic toast - lots of leftovers, though.
Husband had liver and onions, fries, salad.

Last night I found a gap of space before the hockey ( hooray for Leafs O.T. win! ) and baseball ( congrats to Cubs!! game 7 tonight!! ) games started.
Made a chicken pot pie and a scallop/lobster creamed mixture over Vol-au-vent puff pastry cups.
Used Dr Otekers/Sherrif boxed pastry. Makes dough for 2 crusts. ( btw that boxed pastry is on sale this Friday at FreshCo for .99 )
Lined a deep 8 x 11 cake pan with 1/2 the dough then sauteed up chunks of sl/bl chick breasts with diced red onion, celery, added in diced carrots, frozen corn ( gah!! GMO death, lol ) and a bit of potato.
Cheated for the sauce by adding the drained broth from a can of ch noodle soup ( laughed that I saved the noodles, can't imagine who here will eat those up now? ) and also 1 full can cr of mush soup, liberal shakes of dried parsley and black pepper, thickened the mixture a tad more with flour roux. Emptied filling onto pastry bottom then covered with top layer of pastry.
Baked 1 hour.
The Vol-au-vents bake up fast ( Tenderflake brand frozen 6 to a box ) , did those up before the chicken pot pie went in the oven.
Filling for puff pastry cups was so simple. Sauteed paper thin red onion slices in butter, added scallops and the meat of a single lobster tail, then frozen green sweetlet peas and a jar of Classico 4 cheese white sauce. Sprinkled in dried parsley. heated till all meat cooked.
So yummy!!

Moose steaks done in oven with honey garlic .. mushrooms and onions and cheese baked potatoes with sour cream and garlic bread .. no time fuss over dessert today.

It is cold and damp this morning and although the rain should stop around Noon I am going to make a pot of Potato Soup tonight for dinner. Perfect meal since we will be eating at different times tonight

Going to pick-up Chinese, haven't decided what yet but one dish with lots of veggies for sure.
