I whipped up a homemade mac and cheese last night. They ate every bit!!! So much for leftovers for lunch today

Yayyyyy!! Found some local hothouse grown romaine today so a huge Caesar salad and butterflied shrimp tonight. We are both way too excited for a salad😄

I was making up a new batch of fennel/zucchini soup and as usual I stray from the recipe tossing in bits of this and that.
Added bok choy, chopped up fresh dill, cilantro, chives and painstakingly stripped the tiny leaves off many stems of the fresh thyme.
Tossed in the last 6 oz of a pressure cooked blade steak just to have small bits of beef to flavour it more. Also added a tray of NuPasta " spaghetti " that I cut into smaller pieces.
By the time it was all done I had already eaten something else for dinner.....so this will be Saturday soup.

Last night I was out late so when I got home it was what can I make quick with little effort so it became leftovers. I heated up some Chicken Strips and Roasted Potatoes that were in the fridge and that was dinner. Nothing fancy but it was almost 8 and I had little ambition but needed to eat

I am going to do Baked Chicken Fajitas. Chicken, Peppers, Mushrooms, Onions and Spices wrapped in Tortilla with Cheese and baked. Might make a Kale Salad to go with it.

I had wanted to make Chinese hekka casserole all week, and it just didn't happen, but it's in the oven now!
Will serve over basmati rice mixed with sauteed mushrooms and green onion.
Had a half bowl of orzo soup to start.
