What's For Dinner?

Went fishing today, so we had campfire fried trout, baked spuds, and macaroni salad. Everything tastes better cooked over a fire!

Tonight I made some fresh meatballs, grilled peppers, diced tomatoes, mushrooms. Threw it all on a couple rolls with tomato sauce. Just made some mccains sweet potato fries to go with it.

We went to a BBQ tonight so I brough some of my vegan potato salad and we had veggie burgers and fruits and veggies.

Summer's more than half over, but we had our first barbecued meal - since we just got a 'new-to-us' BBQ from a guy at my husband's work. So barbecued hamburgers with all the fixin's and macaroni salad. Gee, nothing tastes as good as a BBQ burger when you haven't had one for a year!!
Ah, but tonight is the AMAZING supper!!! Sobey's had a great price on pork, so my husband is making his world-famous schnitzel - I'm going to be dreaming of it all day! I'll make mashed potatoes and mixed veggies to go with, but honestly, this is one meal which is all about the meat! He just takes the time and makes the effort to make them really thin, and cook them so they are crispy outside and juicy inside. This event takes hours and hours...
If I would have known he made these before I married him, I probably would have married him for his schnitzel alone, lol!

Is he willing to divulge his Schnitzel recipe? I have such fond memories from my childhood of a friend of mine, they were of German heritage, Finkbeiner the family name was, and she would bring me her mom's left over schnitzel in her school lunch once and a while. We are talking almost 40 years ago now. Wow, what memories.
