    I made some sort of pasta thing.

    Chopped up sweet peppers, tomatos, mushrooms, and some garlic. I sauteed it in lots olive oil with some seasonings until it was brownish and smelling good (LOL)

    Poured it over rigatoni pasta and mixed it in with a bit more olive oil and done!

    It was REALLY yummy, think I might add a bit of onion next time.

    I like doing that kind of thing myself. Throw whatever I have in there including olive oil and some parm cheese.

    Last night I made lemon chicken,served with faux rice and a green salad. Leftover homemade carrot cake for dessert. Not sure about tonight,maybe a stew,something in the dutch oven so I don't have to fuss over it.

    About 1/2 an hour ago I made my veggie meatloaf that I will use tonight for dinner. I didn't really follow a recipe except for how to use the TVP(textured vegetable protein)

    2 cups tvp soaked in hot water for 5 mins.
    Then added 1 cup rolled oats
    3 egg whites (I know I know, Im trying to find something better,lol)
    oregano,thyme,salt,pepper,soy sauce,ketchup,tomato sauce,Chopped garlic and jalapeno,1/4 cup unsweetened soy milk. Added all of these ingredients along with lightly sauted onions to the TVP and mixed with hands and formed into a loaf pan.
    Covered with tin foil and placed in the oven for 45mins at 325..At the 43 min mark I took the tin foil off and put on broil for 2 mins.

    I made a sauce to go with it consisting of: 1/2 a cup tomato sauce, tbsp soy sauce, 1/4 cup ketchup, tbsp chopped garlic, oregano, and thyme.

    Salmon Pie

    9 - 10 potatoes, mashed
    1 Fillet of Salmon (cooked and flaked)
    1 Can of Cream of brocolli soup

    Put some mashed potatoes on bottom of pain, then your salmon, soup, and then cover rest in the mashed potatoes.. Cook at 350 degree's till golden brown.. and
    serve
