rotisserie chicken and garlic toast.

DH and I had lunch at the Post Hotel in Lake Louise today-very posh and way too expensive for a SC to stay there( I am guessing $300+per night or have dinner ( at $100+ each). However, once or twice a year for a special occasion we have a lovely lunch for two which is around $16-17 each for a huge portion of delicious food and the setting is gorgeous. Biggest bonus-on the way back we saw a grizzly bear foraging at the side of the road just a few feet from our car-priceless!! We are too stuffed to even need dinner.

I decided on salmon tonight and I'm glad I did
It's going to take some getting used to but I am getting better at cooking healthy foods my dad can eat.
I bbq'd the salmon in foil and on a bed of sliced lemons with fresh dill layed on top. Brown rice cooked in chicken stock (no salt) topped with sliced green onions, side salad and gravy by sauteing shallots in EVOO adding a bit of flour (bad I know) to thicken, chicken stock to make the sauce, dijon mustard, loads of fresh dill, lemon juice and pepper WOW it was so freakin' good and dad could eat it and not have to worry and was still content

There really has not been much of the home cooking since I am recovering. ( still/sort of ) Anyhow I have been using up the freezer stuff that I got for " peanuts ". Those Healthy Choice microwave things are not bad, but the guys need 2 each to make a serving. Pizza's ( Dr. Oetker ) and the FPC Easy Express pasta things. I won't get away with this for much longer before there is a mutiny! lol

We're on the 7-day Carb Addict's Diet, so yesterday was shrimp stir-fry and today will be chicken premavera. I'll be happy to finally be off this routine and planning our own dinners again...
