I'm going to roast a chicken today, and then tonight I;m going to make hot chicken sandwich piled high with chicken, peas, green onions and smothered in gravy. I'll serve it with some Jasmine rice that I think I'll make into a fried rice with some of the chicken, veggies and some soy sauce.
We all need a little sunshine every now and then

kids got fish and chips, i made myself a veggie burger with sauteed mushrooms, topped with feta cheese, and a naan bread for a bun. so gosh darn good!

I'm thinking cabbage rolls, I have a craving, but depending what time I get home. I heard that Nat, you have a fabulous recipe for lazy man cabbage rolls, any chance of getting it????

Tonight it's homemade pizza and caesar salad...I have been waiting for a cooler day so that turning on the oven doesn't scortch us out of the house.

Cheap BBQ chicken again. Superstore had extra ML chicken breasts from their sale last week ($4.99/lb) they were trying to clear out so it was on for $3.99/lb. So $4 for two chicken breasts (didn't have my coupons on me) is a pretty darn good deal. Dinner will be a side salad, mostly broccoli and peppers, with a curried dressing I will make.
Oh, and I finally purchased Laughing Cow cheese... My gosh is it yummy. A mix between cream cheese (but sweeter) and a Brie. And such few calories for the light version. I am happy to have a spreadable cheese again (was (am) a Boursin freak but I could see myself mixing some spices into Laughing Cow and having a total treat)

I'm going to try & make tandoori chicken. I don't have any coriander, but I will add extra cumin & ginger & cayenne pepper. I hope it turns out.

My #2 son took charge of the BBQ & it turned out pretty good.
I am glad that he enjoys cooking. Someday he will make a good husband to the right girl, as he is still getting over one of those crushing break ups. I am one proud Momma. My older son's idea of cooking is making kraft dinner or grilled cheese.
My boys are 24 & 27 & for the most part they are very decent young men.
dh is in the dog house for not getting anything done over the weekend....dinner for him will be.....
Guilt trip ala Loocie.
