This was a birthday meal request from my youngest son; dessert was a slice of vanilla cake served with whipped cream and berries. Weird kid doesn't like chocolate cake, what's with that?
Ginger Beef, Sweet & Sour Pork, Salt & Pepper Shrimp, served with rice. He also asked for Asian Cabbage Salad, which I also made, but not pictured.

Yay for a lasagne sale at M&Ms - had one with garlic bread.
Tonight will be fried wontons, filling will be ground pork, green onion, mushrooms, carrots. Need to figure out what to serve with them yet.

It's really easy. You can make it wiht jarred pasta sauce, but homemade is always best of coarse. So I make a nice pot of spaghetti sauce. Cook your spaghette until it's only half cooked. It will finish cooking in the oven, and I've found that if you cook the pasta to al dente, it turns to mush when the baking process is done. When you drain your spaghetti, put it back into the pot and add a cup or so of the sauce, toss it gently to distribute the sauce over all the spagetti, then your ready to put the casserole together.
Layering goes as such:
thick layer of sauce on bottom of casserole dish (you can use individual dishes if you would like)
a layer of spaghetti, a layer of sauce, a layer of mozzarella cheese, layer of spaghetti, layer of sauce (you can make as many layers as you would like) and balance of cheese on top.
You can freeze it at this point, or cover it with foil and put it in a 350 oven for 30 minutes, then remove the foild and bake another 5 to 10 minutes until the cheese browns nicely.
Make sure you use enough sauce to help finish the spaghetti. I say I use about 1 and a half cups on the bottom, and the same between each layer.
If you want my sauce recipe, just let me know and I'll post it.We all need a little sunshine every now and then
