Tonight I made nachos loaded with ground beef, salsa, tomato, peppers, and onions smoothered in cheese! I have been busy baking all day. Made Peppermint Crunch Bars and some Gingerbread cookies with sugar on top!
Planned to make Pecan bars tomorrow only to realize the sheer horror of finding a bag of Walnuts I mistakenly bought instead of Pecans! Can't find my receipt either and they were quite expensive around $7. Chicken caesar salad and i think I am going to make some potato wedges with seasoning on them to go with it. And I have a can of Orange Crush I will enjoy with this.

I will look in the fridge some prepared meals...I love those...So handy when you dont feel you want cooking.
The goal is to live day by day not to much thinking hahaha !!!!

Nacho chips with melted marble cheese and meat sauce.
Earlier today I made peanut butter & chocolate truffles and chocolate drop cookies.
In the last two days I also made cream cheese mints. Half were mint and coloured green, the other half were vanilla because my mom hates mint. Sunday I made molasses oatmeal chocolate chip cookies. My family and I went out to dinner for my mum and dad's anniversary!
Fresh peking duck, being carved at the table
Duck wrapped in a sesame flour "tortilla" with hoisin sauce, carrots and scallions
The rest of the duck meat shredded and diced with mixed vegetables to make lettuce wraps!
Delicious 6.5 pound lobster
These were just the highlights of the meal- there were a "few" more dishes to be had.

We haven't been eating very well with the packing up in Florida and moving to Texas. spending 3 days on the road, I hate to unpack everything just to make a dinner, then have to pack it all up again securely to continue on, so our dinners have consisted of some of the frozens from the freezer that could be popped into the microwave. One night was chili with some garlic toast (no salad ), one night was soup and sammies, and last night I actually had the bbq set up again so I did steak and a foil pack of mixed veggies with garlic.
I had planned on making dh a really nice dinner tonight, but unfortunately I woke up with an extremely soar throat today and have no lost my voice completely, so dinner tonight will be some really good homemade turkey and rice soup I have in the freezer, and dh will be cookingWe all need a little sunshine every now and then

Tonight is my BF's families Patron Saint Day (St Nikolas) so we are going there...Im sure there will be cabbage rolls, potatoes, sauerkraut, salads, baklava and more I don't know of. It is meatless and dairy free bc the fasting before Christmas has already began for most Serbians (Orthodox faith)

It was surf and turf for supper last night, although I would have killed for janetta's supper.
Grilled steak and salt & pepper shrimp, rice and green beans. The preferred rice here seems to be the sticky variety...hubby not liking that as much...I included a free sunset with the supper pic.

Last night was Jane's nuggest and McCain hasbrowns pan fried with corn. DH was happy
As for tonight I have no idea. It's snowing and cold and all I want to do is curl up with Harley on the couch and watch a movie. Actually Harley wants to go nuts in the snow again!!!!
