Turning the taco leftovers into Mexican Lasagna

I might "cheat" and have mashed taters

i've defrosted some pork so that's a 'for sure'.. going to season them with salt, pepper and paprika and pan-fry them with a whole bunch of caramalised onion... haven't decided what to make with it yet.. if i have enough potatoes then i'll chop them up and pan-fry them, also steamed broccoli.. if i don't have enough potatoes then i'll go to the stand-by - knorr noodles

I just boiled chicken legs with a bunch of seasoning and used the broth to make soup. I took a bunch of veg on their last legs like corn, snap peas and tomatoes and added it to the soup. I took the chicken off the bones and will use it to make sandwiches for dinner, with my soup.

No one felt much like eating tonight, so we had a giant pot of Mr. Noodles. I had a sandwich, too. Guys will probably eat later.

Yesterday BF and I were at the Toronto Vegetarian Food Festival and we had vegan/gluten free tostadas and nachos with guacamole and empanadas then we ended off with gluten free/ vegan red velvet cupcakes from Bunners bakery soooo good!!

Tonight probably something simple, veggie burgers, sweet potatoe fries and a big red leaf salad with tomators and cucumbers.

Oh, I'm so happy that it's that time of the month!!!

No, not that..... I've asked my husband to make supper, and he said YES!!!

We'll be having his amazing schnitzel, with mashed potatoes, and some sort of veg or salad.

    I'm one happy woman!

This is last nights Mexican Lasagna. I added the homemade guac that I forgot to put out with the tacos the night before

I am currently making corn stock and plan on using the rest of the roasted corn for a griiled corn soup with feta and basil for dinner tonight although that may change lol

I was going to copy your lead harbie because there was a 1/2 lb of hamburger meat that I needed to cook up. Made it with some Mexi flavouring and threw it back in the fridge for today - I guess my fiancé wanted a taco for a midnight snack - now there isn't enough for a lasagne.

Right now I am prepping dinner - asian beef and peppers stir-fry, light on the beef. Serving it over riced cauliflower.

Also making a huge pot of chicken soup from some freezer burnt drumsticks that got lost in the freezer. Will make the stock today and add the barley/veggies tomorrow, or might just leave it as stock... haven't decided yet.

My grandfather gave me two store plastic bags of tomatoes - we're never gonna get through them in time considering only the fiancé eats them, so homemade tomato sauce it is.

Was thinking about muffins, but honestly - I'm a little tuckered out in the kitchen
