    Oven broiled back ribs with Sweet Baby Ray's! Super juicy, tender and Mmmm!
    I made pasta salad with black olives and artichokes from my pizza making night, grated carrots, dill pickles and edamame beans which I found hidden in the back of the freezer.
    As for greens, we had steamed brussels sprouts with garlic butter.

    I cooked the ribs in the mini-oven. Saves energy and doesn't over heat the house!

    tonight is going to be a BBQ night... right after we refill the propane tank again (seems like we're forever doing this) so hamburgers and caesar salad. my husband worked 5 days of afternoons this week (home by 3am) and then had to get up this morning to be at work for 8am so i think the kiddies and I will treat him to some ice cream from DQ!

    Here's some wings I made for supper! I breaded them to give them a nice little crunch and sauced them with my version of Vodka BBQ sauce!

    Ingredients:

    1/2 cup Vodka
    2 cups Ketchup
    1/2 cup Apple Cider Vinegar
    1/2 tbsp. Ground Cumin
    1/4 tbsp. Garlic Powder
    1/2 tbsp. Chili Powder
    1/2 tbsp. Cayenne Pepper
    2 tbsp Raw Sugar
    1 tbsp Kosher Salt
    1/2 tsp Freshly minced garlic
    1/2 tbsp Liquid smoke
    1 tbsp Worcestershire sauce
    1 tbsp Soya sauce
    2 tbsp Pure Maple syrup
    1 tsp Freshly ground pepper
    Juice of a fresh Lemon

    Mix well and simmer on low for about 15-30 minutes.

    I made 2 kinds of cabbage rolls, I used savoy cabbage.

    One tray had whole wheat coucous with caramelized onions, roasted red pepper and garlic spice and lemon juice, the other tray had brown rice, cumin, chopped tomatoes, fine herbs, garlic and pepper, both done in the oven with my homemade tomato sauce over it. Shoudl be enough for about 4 meals lol

    Well, I finally took those shirataki noodles for a test drive tonight. Wanted to know if they were worth all the hype but had to wait until a night when I was cooking for one...just in case they were a flop. (LOL).

    I made a shirataki noodle bake using the tofu shirataki since that's all DH could find at the store. Super glad I did some research on the internet and found out that I should rinse the heck out of them (way more than what the package tells you to do) because that smell that comes off them...ugh...gross. I swear they must package them in fish pee or something. Ewww. The stink!

    Anyway, by the time I was done, there wasn't an ounce of that icky odour left on them. I doused them with cayenne, red pepper flakes and chili powder *just in case*...you know, stun the old senses with spice just in case they end of tasting horrible?

    Well, I didn't mind them after all. I really love pasta so if you hope this will be a nice low carb pasta substitute, you will be disappointed. A little too...rubbery to be a perfect replacement. But...at 40 calories for an 8 oz bag of the suckers, well, I could be persuaded to convert.

    If only all the asian food marts weren't on the other fricken side of town....

    I grilled ribeye steaks...served with baked potatoes, pumpernickel bread and veggie stir-fry. My suppers aren't very creative - you won't see too many casseroles at my house - and the reason being: I have very suspicious children. They are afraid of vegetables that are disguised in any way...you see how many times I serve broccoli?

    I made veggie sloppy joes, served on toasted garlic bread; pre-made 3-chees stuffed potatoes; lentils; peas & spinach. Easy and yummy.
