Tonight I made baked spaghetti. I first cooked the spaghetti, then chopped up asparagus and mushrooms. I mixed the spaghetti with that and some grated mixed cheese. I put it into a small casserole dish and added clam chowder. I topped it off with a bit more of the cheese and bread crumbs mixed with parm cheese. I baked it at 375 for about 15 mins. I served it with spinach salad. I was so happy how it turned out.

That sounds absolutely yummy! I never thought of using clam chowder in a casserole before!

I love it with a bit of lemon but usually just on its own its still awesome.

I thought about using cream of mushroom but tried this and it turned out good. I kept looking at the cans in my pantry for about 5 mins before I decided,lol.

Went to Jack Astors last night - had the Mediterranean chicken focaccia sandwhich. Grilled chicken on a bed of baby spinach and roasted red onions, lemon garlic mayo and goat cheese. It was soooo yummy!
