    I baked a pan of marinaded tofu. Used to make them regularly but it had been a long time. they are delish! Half the batch is in the freezer for a few meals when I am too tired/lazy to cook.

    Yesterday i was going through my loose recipe clippings and came across an old newspaper clipping. The paper was really yellowed so im assuming it is an old clipping probably from the 70's. This morning i deciced to bake this recipe. It is called Blueberry Coffee Cake. I have about 5 large freezer bags of blueberries so i need to use them up! I am going to take a pic of this and post it and the recipe with the pic.

    The Blueberry Coffee Cake turned out great! I didnt put the topping that the recipe calls for. I made a creamage with milk and icing sugar. Super good taste.

    BLUEBERRY COFFEE CAKE

    TOPPING:
    1/3 CUP ALL PURPOSE FLOUR
    1/4 CUP UNSALTED BUTTER, ROOM TEMPERATURE
    1 CUP FLAKED SWEETENED COCONUT
    1/2 CUP PACKED BROWN SUGAR
    1 TSP GROUND CINNAMON

    FOR TOPPING: COMBINE FLOUR AND BUTTER WITH COCONUT, BROWN SUGAR AND CINNAMON IN MEDIUM BOWL. MIX UNTIL M OIST AND CRUMBLY. SET ASIDE.

    CAKE:
    2 CUPS ALL-PURPOSE FLOUR
    1/2 CUP UNSALTED BUTT3ER, ROOM TEMPERATURE
    2 1/2 TSPS BAKING POWDER
    1/2 TSP SALT
    1 CUP GRANULATED SUGAR
    2 LARGE EGGS
    1/2 CUP SOUR CREAM
    1/2 CUP MILK
    1 TSP VANILLA EXTRACT
    2 CUPS FRESH OR FROZEN BLUEBERRIES

    PREHEAT OVEN TO 357f (YES, THAT RIGHT, I PUT IT AT 360F). BUTTER AND FLOUR 13 X 9 X 2 INCH BAKING PAN. SIFT FLOUR, BAKING POWDER AND SALT IN A SMALL BOWL.

    USING ELECTRIC MIXER, BEAT REMAINING 1/2 CUP BUTTER IN LARGE BOWL UNTIL FLUFFY. GRADUALLY ADD 1 CUP GRANULATED SUGAR, BEATING UNTIL WELL BLENDED. ADD EGGS 1 AT A TIME, BEATING TO BLEND AFTER EACH ADDITION.

    IN A SMALL BOWL COMBINE MILK, SOUR CREAM AND VANILLA, THEN ADD INTO THE SUGAR/EGG/BUTTER MIXTURE ALTERNATELY WITH THE DRY INGREDIENTS. FOLD IN BLUEBERRIES.

    TRANSFER CAKE BATTER TO PREPARED BAKING PAN. SPRINKLE WOPPING EVENLY OVER BATTER. BAKE CAKE UNTIL TESTER INSERTED INTO CENTER COMES OUT CLEAN AND TOPPING IS GOLDEN BROWN, ABOUT 40 MINUTES (45 MINUTES FOR ME). COOL CAKE SLIGHTLY. SERVE WARM OR AT ROOM TEMPERATURE. ENJOY!

    I DIDNT USE THE TOPPING BECAUSE HUBBY IS DIABETIC AND I THINK IT WOULD HAVE BEEN TOO SWEET FOR HIM.

    Thank you for sharing. i will have to try. I hear you on the newspaper clipping recipes, i had a few and lost. There was a sour cream coffee cake, plain not fruit it was the best. There was a time when Tim Hortons use to sell a coffee cake and everyone who tasted the one i made from the recipe use to say it's better than Tim's. I also had a cherry pound cake recipe that i had clipped from the local "guardian" paper we use to receive weekly. Again it was the best, i cannot recreate without the recipe. I swear these newspaper clipping recipe was the best.

    I’ve never been much of a baker especially since we became vegan but today I tried my hand and chewy chocolate chip cookies and they are freaking amazing. Next time I’ll adapt it and make a s’mores version.

    Now I’m really going to have to workout today

    Busy weekend when it comes to the baking, I have made:
    Banana Muffins - My Bananas looked like they were Banana Bread ready but still quite firm, but they had been peeled so I was committed
    Pineapple Upside Down Cake - I had some fresh Pineapple to use up and did not want to look for a recipe so relied on an old favourite
    Luscious Lemon Ricotta Cookies - The recipe was calling to me, I am obsessed with all things Ricotta
    Garlic Parmesan Focaccia - I am planning to make soup later in the week for dinner and this will be the side

    I had planned some Carrot Muffins but ran out of time, oh well maybe during the week or next weekend

    This morning, i raided the freezer and took out a Tarte aux Sucre and a Dates Cake, both of which were baked in December. We didnt get around to eating them at Christmas!

    there is no baking involved in this cake, but after watching the video I was so intrigued to try making one. I'm not permitted any of this cake atm, but my guys would probably dig into it. meh? maybe I'll keep this as a back burner recipe for another time.
