    Love your peppers @walkonby lol.

    Well I decided to avoid shopping and try to force myself into baking instead. It worked!
    I made rosemary focaccia bread and then noticed the chocolate chips in the cupboard . Both turned out ok .

    I went grocery shopping today and when I was scrubbing the fridge before I reloaded it I noticed I had some blueberries to use up. Wanted to keep it simple so just went with my standard Sour Cream Blueberry muffins. Although I did sub Sour Cream for Greek Yogurt.

    DH became diabetic a few years ago. He is a sweet lover and anti veg/fruit individual. So, in an effort to beat the system - for our mid afternoon break (his is coffee - mine is water), I decided we should have a ‘healthy’ snack that is disguised. Since most of the bake shops are beyond our means (financially and sugar), every couple of weeks or so, I pick up some fruits in the bargain section and spend my time poring over the ‘easy’ recipes to see what might arise. The recipes are usually ‘adjusted’ in my kitchen and sugar is usually halved or substituted with honey or stevia (he hates the aftertaste of all substitutes).

    the good thing is - he has never refused to have a snack - but… when he has a preference - sadly it can never be replicated

    We made butter chicken for the first time last night. We also made Naan bread using the breadmaker dough setting. DH did an incredible job rolling out the dough and we baked in the oven

    OMG! @crafter Yours looks so yummy! Isn't it satisfying working with Phyllo?
    It seems I've created a monster with my baking and cooking because I wanted to pay my sis for sharing her Netflix account with us for the last 2 years. ( I had noticed the price of it increased again )
    I offered them a grocery GC or whatever they would like and my BIL suggested I make a whack of things from my recipe arsenal and send them over! What a brilliant idea eh?
    We've not been able to see them at all since ??? 2019? ( un-vaxed ) so this drop off food gift is perfect!
    I am getting my brain going for a list of things I want to make and send over.
    My sis suggested laughingly...ring the bell, drop the food and run away! lol

    Had some Bananas that went from hard and green to Banana Bread ready in what felt like 2 days so I made a batch of Banana Muffins.

    Going to have a busy week so I made a batch of Baked Apple Oatmeal to have for Breakfast this week.

    One night this week we are having a meal that calls for Biscuits on the side, not the biggest fan of Biscuits so opted to make Dinner Rolls instead.

    Could hardly contain myself to try out a new recipe for my weight loss journey. Cauliflower Chicken Pot Pie.
    DH was so kind to trek over to WM late to grab me a few cauliflower ( I also want to make a few single serve cauliflower pizzas. )
    One large head gave me 4 cups riced and from that I made 6 single serve pies.
    I'll be enjoying 2 for my lunch today.
