We are finally out of the daily 30C temps, so we baked a pan of brownies and baked a loaf of banana bread.

Just baked up some congo bars, which are essentially blondies (Brownie-like chocolate chip cookies). So delicious if you under-cook by just a few minutes

apple pie -
precooked the apples first.
this is the first time i tried 'ginger gold' variety. got it at a farmer's market for $5 for a 10 lb bag.
the apples are a nice flavour but a little too soft when cooked.
i don't think i would use them for a pie again but i would definitely use them for apple crumble.

I've been given a lot of apples from a couple of apple trees. They aren't crab apples, but they are pretty sour. I've used some in an apple crisp and froze lots for crisps during the winter. I want to make another apple crisp today or tomorrow...some of these apples are getting soft. The apples that are getting a bit soft are now sweet, whereas they were previously sour.
