I was home for most of the day so I did a HUGE batch of Zuppa Toscanna soup and Manacotti with spicey vodlka sauce. Mmmmmm I can't wait for dinner .
Tomorrow I will be prepping all the chicken and roast that I bought.

Deer stew, YUM! And Harbie, your meals allways sound so good - all the posts do!
I made a huge pot of chili (my husband was home in time to chop for me!), served with rotini. Son is very happy there will be leftovers for lunch tomorrow!

This is vegetarian dinner tonight
Easy vegetable curry.
oil for cooking,1 onion diced,2 cloves garlic minced,1 large potato diced,2 cups cauliflower cit into small florettes,1 can drained chickpeas 1 tbsp bottled curry paste squeeze lemon salt to taste.
Stir fry onions & garlic untill softened.Add potato,cauliflower & water.Cover & simmer till tender.Stir in chickpeas,curry paste,lemon juice & salt.Simmer uncovered stirring untill chickpeas are hot.Stir in some chopped cilantro if you like it.
Be a little kinder than necessary,remember everyone is fighting their own battles.

Tonight I made hamburger, tomatoes, and elbow noodles with a twist and added a package of taco seasoning and lots of green and orange peppers, I donèt usually use packages seasonings but could not think of how to make taco seasoning for some reason

We are having leftovers .....but I am also going to prep the chicken and pot roast I got at Costco and put in the freezer plus making roasted cauilflower soup, cauliflower/cheese soup (I got alot of cauliflower ) and loaded baked potatoe soup. All soups are minus any cheese and or dairy and I will freeze them using my vac sealer and when we are going to eat it just heat and add dairy and or cheese and I'm done!

Last night was chicken stir fry over basmati rice.
Tonight its Baton Rouge for some ribs! BF had to work 18 hours Monday bc there was an audit at his company and he was in charge of stuff so to say thank you the CEO is sending him and me to dinner anywhere we want and we can spend anything we want lol

Make soup out of the leftover chili by adding beef broth and noodles. Everyone made their own sandwiches to go with.
