    1 1/2 cups tomato sauce or 1 10 1/2 oz canned of chopped tomatoes
    12 ozs beer
    6-8 tbsp. chili powder
    3-4 Ancho pods
    2-3 tbsp. paprika
    3-6 tbsp. cumin
    1 tbsp. oregano
    3 tbsp. cider viegar
    1-3 diced jalapeno chiles, double if no Anchos
    salt to taste

    Normal toppings/sides to select from: cheddar cheese, pinto beans, tortilla bread or chips, fresh onion, avocados

    Sear the beef chunks in batches in a bit of fat in a big pot. Add the garlic and onion, and heat through for a few minutes. Add stock. Simmer. Meanwhile, put all seasoning into frying pan with a bit of water or stock and simmer for 15 minutes to blend the flavors. Add seasoning mix to the pot, and simmer for at least an hour...but much longer, if you wish. In the last 20 minutes of cooking, add jalapenos and vinegar. It will taste best the next day.
    Wow someone else who puts vinegar in their chili!
    My mom always did and so do I, never really sure why, just the way I was taught.

    I don't think I ever really wrote out my Chili recipe but I did take this pic, back a while ago.

    Well, the good news is that it has cooled down some.
    The bad news is that it's because of the wildfires in northern AB, we are starting to get the smoke haze, right now it's a dull yellow.
    A nephew sent a photo from Edmonton, which he labelled The Apocalypse - dull beige-orange sky, creepy looking.

    Good morning all.
    Was up since 4am not sure what’s going on. I guess My brain is over tax so as soon as my eyes are open I keep thinking about all the things that needed to be done
    My SIL is having a religious function tomorrow and there is a lot that have to be done today to help prepare for tomorrow.

    I can't believe our GS gets up at 6:45 every morning. I mean, I believe it because I just suddenly woke up at 6:39, put the coffee on, and here we are.
    Up really early.
    Too early because I watched 2 episodes of "The Block" in bed last night.

    Good morning, all. GRRR...I got up at about 6 this morning in order to do a few chores and to head out the door for a Friday yardsale that was advertised as starting at 8 a.m. Got there on the dot. The people hadn't bothered to set up yet and said it would be a few hours before they get around to it. I really felt bad for an elderly couple because the man walked with a cane and with great trouble, but they had struggled up the long, long driveway nevertheless. :-( I suppose I will go back in at 10 a.m. because the place is quite close by and it was advertised as being "huge." Yeah, well, it was also adv. as 8 a.m. OK...I think I've used up my quota of complaints for the day.

    Waiting for my BrotherR who is in with the dr. He has to have a colonoscopy in July - I sure hope that sedation is available! I have not mentioned to him that it may not be.
    Shaping up to be a nice day.
