I made corned beef hash. We haven't had that in awhile. I had some leftover in the freeze from about 3 weeks ago and decided to use it up. Corned beef hash to me is one of those comfort foods that just feels good when you eat it. All those fried onions, chunks of potato, a bit of peppers and lots of corned beef hash. I love to get a good crust on it, then top it with a bit of cheese and melt in under the broiler for just a second. It was sooooooo good.

mmm that corned beef and hash reminds me of my mom.. i can smell it now. last night was hamburgers and chicken burgers on the BBQ. tonight i think it's gonna be sweet and sour turkey meatballs, mashed potatoes and broccoli.

nom nom nom. We're having corned beef, cabbage, and carrots. There'll be mashed potatoes too if I ever get around to peeling them. lol. I swear I was Irish in my previous life. I just freakin' LOVE corned beef.

Tonight was quick, I made a couple of the cardinal select burger patties from no frills on sale this week. I served that with mashed potatoes. I needed to kinda get out of the way quick as my cousin was making tons of chicken wings for a big party tonight(i'm not invited to,lol)

We had pork chops, a Knorr rice side dish and grilled veggies done in the oven with apple juice (fresh mushrooms, carrots, red and green peppers)....it was so good!

i made myself this ultimate vegetarian pasta, it contained:
whole wheat rotini, basil tomato sauce, tofu, chick peas, rapini, spinach, carrots (shredded) broccoli slaw, feta, and some random spices.

tonight I made a pork cutlet, I purchased a pork loin at costco a few weeks ago (well my dd got it for me), I had cut it into some chops and 2 roasts. This morning I took 5 chops, pounded them thin, tenderized them with the meat mallet (which by the way is great therapy
) and seasoned them with garlic powder, paprika and my special cajun spice mix. I let them sit all day in the fridge, then tonight I put them in egg, then potatoe flakes, then fried them. Served them with mashed potatoes and grilled asparagus with garlic butter and I made a chicken gravy for the cutlets and the spuds, mmmmm delish.....

Tonight we are having BBQ'd sausage on a bun with Ziggy's Potato Salad...lol
We never eat Ziggy's in the winter but for some reason once the weather gets nice we start to buy it again until the fall.
