    Have you tried replacing the mint with Cilantro they are so good. I have a good one with shrimp and mango with a lime and fish sauce dip. I​ could go on forever, I know what I am making on Monday!!

    Instead of replacing the mint with cilantro, how about both plus basil? It's like the holy trinity of herbs!

    leftovers. kids aren't home today so I usually take advantage of that to clean out the fridge of those bits and bites that wouldn't be enough for a meal for 4. LOL.

    Personal pizzas on Greek pita. Peppers, onion, tomato, turkey pepperoni, leftover BBQ chicken from last night, and I might but some broccoli on mine. Served with a side salad, as per usual.

    Stocked up on produce at Costco so we will have lots of fresh veggie meals coming up. If you have any suggestions that aren't stir-fry or salad I'd love to hear how you "beef" up the veggie intake without feeling like a complete rabbit cause I get sick of salads after awhile.

    Store bought butter chicken samosa's (small ones) and home made egg rolls. The egg rolls were made with ground pork, onions, mushrooms and a coleslaw mix and spiced with soy sauce and ginger. So yummy, I love egg rolls.

    I made potato and onion perogies with the chicken nuggets I picked up on sale at Shoppers. The coating isn't as great as the Jane chicken that I usually wait to go on sale, but I needed to add some protein to my diet after eating like a rabbit the last few weeks and they will probably do me until the Jane brand goes on sale again.

    I did a once around the fridge salad and some nice stuffed burgers for dinner tonight. The fridge is now all cleaned out and nothing will spoil while we're away
