Oh, harbie, I wouldn't want to eat those - they are too cute! Awesome job!

Last night, I ended up not cooking because I was unwell, so we had a late supper of takeout from our favourite Greek place. Enough leftovers for lunch today for me and my son.

Tonight, depends upon how my day goes.... husband is getting pretty sick of having fish every week (though he's a good sport about it, he's just not a fan....), so I'll have to come up with something else meatless and easy.

HUGE pan of Shepard's Pie ( ground chicken used) made in the early a.m. This time I added plenty of fresh cilantro leaves to the mixture just before topping with the mashed and baking. Still smells nice in here even now.

    Left over chicken noodle casserole.
Stir fry using cubed beef, sliced cabbage, grated carrots, onion, left over oven rice, and topped with peanuts.
    Apple crisp for dessert.

Tonight I did pigs in a blanket with homemade biscuit dough. That way I could use the leftover dough to make biscuits for my supper next week when I have class! They were just as good as buying the tube of Pillsbury to do it. I guess mine technically weren't pigs in a blanket though since I bought chicken wieners so um chicken in a blanket? LOL!

I had that with leftover sidekick garlic noodles

Had some more homemade hot pockets - Aylmer Accent Italian tomatoes, Brother mild pepperoni and cheese. These weren't as good as the other ones, but edible.

Also made breakfast squares for the freezer OR to feed us tomorrow if the power goes out - and proceeded to eat four. My belly hurts. My goodness they were tasty. I guess they are kind of like a baked oatmeal. I ate one warm with milk over it, and the others just like a square, as is.

I couldn't tell you the measurements, but here were the ingredients: DRY: Quick oats, brown sugar, crushed cornflake, a bit of flour, chopped up apples (diced), butterscotch chips, cinnamon. WET: 2 eggs beaten, some milk, vanilla, and because I had no honey or syrup - corn syrup. Yes, I know, soooo not healthy, but I only added a bit to help make it a bit stickier. THEN spread it all oyut in a 9 x 13 pan and baked at 350 degrees.... until it looked done, haha. Worst instructions EVER, right? Sorry, I literally just threw whatever looked good into a big metal bowl and slapped it in a baking pan when I was done, hahaha.
