    Experimental chicken in my house! I have chicken thighs that I just boned, some portobello mushrooms that need to be used up, a roasted yellow pepper and some mozzarella cheese. I'm going to put some of each of the pepper, mushrooms and mozza into the chicken, roll it up, roll in bread crumbs, spray with olive oil and bake. I'm doing some plain baked thighs for DS, as he won't eat any of that except the cheese!

    Editing to say, this was really good, gonna do again for sure! I didn't really roll it up as the chicken thighs weren't that big, I kind of folded it in half and secured it with toothpicks. I had Stovetop stuffing to put in too, but there wasn't enough room, we had it on the side.

    Is there any reason why I couldn't prep these with the raw chicken and cooked veggies and freeze it that way, ready to bake?

    Tonight was pasta night--I made a big batch of spaghetti sauce (froze 1/2 for another time) so had homemade spaghetti and garlic bread baked in the oven with lots of cheese!

    Here is. The dairy free corn and clam chowder. Made woth almond fresh, threw in some bacon, fresh chopped parsley and not canned corn either. I boiled and sliced corn on the cob.

    Tonight's chicken experiment wasn't nearly as good. Thinking DS would like it, I put salsa and a bit of mozzarella cheese into the boned chicken thighs instead of my portobello mushroom/roasted pepper and cheese from the other night. It was OK, nothing special, and DS didn't like it either, I had to remove the filling from his before he'd eat it.

    I bought green peppers today at NF, roasted one earlier and will do up some chicken thighs for the freezer I think with the filling in it already. might even skip the cheese in the interest of cutting the fat. Also decided that it's easier to roll the chicken in seasoned breadcrumbs BEFORE you put the filling in.

    Another note, chicken thighs are quite easy to bone, there's really just one large bone and a little joint that gets left behind that you have to cut out. Tonight I didn't save the bones, in the future I will start freezing them to make stock. Normally I cook my chicken with the bones in, but this was tasty with no bones.

    I've looked at crab legs at Costco - OMG is it ever expensive! I'd like for DS to try it once (particularly since we watch The Deadliest Catch), but even enough for him to eat would be more costly than lobster, which I already know he loves!
