Last night, I made chicken the way my mom would once in a while - flour pieces of chicken and fry til golden in butter and oil - they don't need to be done cooking - I use electric skillet. Seasoned with just salt, pepper, garlic powder.
Place in roaster, sprinkle over two sliced onions, then pour over the drippings left in the pan.
Cover and bake about 40 minutes. It's the most tender chicken ever!
Normally I would serve the chicken with mashed potatoes, but we didn't have any, so I made perogies - and used the softened onions overtop of them - yummy! Served with Arctic Gardens veggie mix.
It's just a 'once in a while' meal - greasy goodness!
Lasagne tonight (M&Ms) with a big Caesar salad.Last edited by Natalka; Mon, May 27th, 2013 at 06:03 PM.

Shirnette - cool that you make it a similar way! My mom's passed away, but it's such a wonderful memory to make foods I remember her making!

I cooked a ham last night - took it out of the oven just before DS had an accident in the yard with a tree (he hung off a small, mostly dead tree and it took that moment to break and fall on him) . We spent two hours in the children's emerg before we gave up; DS seemed fine, and they certainly didn't seem concerned. It fell on his lower belly, but not below. Anyhow, DH took him in this morning and he's been deemed OK, and we had last night's ham for supper.
I think after a day or two of ham we're going to do spaghetti. I have meatballs cooked and frozen, Catelli sauce was BOGO at Sobeys, and we need a change!Last edited by Zonny; Mon, May 27th, 2013 at 07:36 PM.

Tonight we went lazy and barbequed some hamsteaks.
Tomorrow I am doing chilli breaded sole with grilled pineapple salsa (lots of jalapenos yumm) and a side of quinoa and peppers. Because DH wants it soooo bad I will make corn on the cob too. Lol.

Tonight will be breakfast for supper - our once every few months 'high cholesterol on a plate'!!!
Bacon, sausage patties, homemade fried potatoes, eggs over easy, and toast.
I would usually make only one meat, but son knew there was the sausage in the freezer which really needed to be used up, so he begged... lol!

making hamburgers tonight for the crew. last night i made them baked sausage, carrots, cheesy pasta and some pepper and celery rice. it was like dinner at its most basic, but apparently it was good.
today 3 out of four of us are sick, so hamburgers are the easiest thing for me to prepare, already had them prepped and frozen so no prep work for me not sure what to do fr a side yet though. something lazy? lol
