Chicken enchiladas, Zonny-style! I put skinless chicken thighs in my crockpot (leave the bones in), with a can of rinsed black beans, some salsa and some taco seasoning. When the chicken is cooked I remove the bones, shred the chicken and mix in some canned refried beans (although I have made my own before). Wrap it up into tortillas, spritz with olive oil and bake in the oven, top with salsa and shredded cheddar toward the end.
I'm not sure if this is really an enchilada, a burrito or something else, but it's tasty! Fairly low fat too if you don't add tons of cheese and sour cream.

Dh made dinner tonight as I was on a course all weekend. Chicken vegetable noodle soup from scratch. I was extremely impressed. Maybe too impressed. Maybe he can make dinner more often now, hmmmmm....

I have a craving for cabbage rolls but I can never seem to get them to roll right..lol..so instead I'm going to make Cabbage Hash ( a similar version on the Kraft site) break out the food processor to easily shred the cabbage; although sometimes I find it just as easy to use the held hand cheese grater or chop fine with a sharp knife...and not have to bother washing up the food processor..lol...

Tonight we are having home made burgers on the BBQ with fried up potatoes (like fries) Its leftover potato from making potato skins for a party we went to Friday night.

Last night was homemade chicken wings with bbq sauce, cheesy waffle fries and homemade coleslaw - I tried to create sports bar feel since fiance was watching football all day haha
Today is chicken I marinaded in a Greek dressing with lemon potatoes and a green leaf salad.

Last night I made sweet and sour meatballs with rice for supper. I cooked up an entire family pack of ground beef, as meatballs and froze all the extras.
Tonight we are having roast beef cooked with onions, carrots, and potatoes. We'll have free Cesar salad with it because the school that I taught at today had 5 large containers extra and I was invited to take some home. Always have meals with a glass of milk.
edit: went back to NF again this afternoon and they still didn't have the 10lb bags of red onions...like I was told when I was there yesterday. So supper changed somewhat. No onions, no potatoes. Instead we will be having potato salad and coleslaw that we were given on Saturday. I forgot about them.Last edited by Angela273; Mon, Oct 28th, 2013 at 07:30 PM.

I plan to make a big pot of lentil soup with the leftover ham from last night and vegetables. With this I will serve homemade buns from the freezer and a leftover dessert from last night.

Its really simple! I peel and cut the potatoes in 4, if bigger 6 pieces. salt, pepper, oregano, dill, 1/2 cup of water and juice of 1 lemon and I cut up some lemon pieces. Cover and bake until tender - there shouldn't be to much water left over...but I check 20 minutes in to make sure there is water and lemon juice bc you don't want it dry. If the potatoes seem dry just add some more water and a squeeze of lemon. I don't really have exact measurements bc its something I thought up after I was at a Greek restaurant and had there lemons potatoes haha I just used seasonings I loved and had on hand.

Greek sauce with filet mignon cubes on long macaroni (my fave) I don't even know if Greek spaghetti is a real thing but that's what it's called in our house .
