Extreme busy week for myself and my wife and on top we have about 20 people coming up north this weekend so we need to get everything together for that by Friday afternoon so looks like its going to be a fend for yourself kind of week
I was going to order pizza but I thought I would wait until the kids came home to see if they would pay for a change. I think it would be nice if I had some free pizza.

Oh I am so hungry. Chicken is almost done. A repeat of Friday nights dinner but rice instead of potatoes. Smells so good.

Last night since I was on my own for dinner I decided to make Pulled Pork on Bun, it was homemade Pulled Pork from the freezer.
Figured Pasta would be better left to tonight when we are both home as I knew if it was made and suggested for dinner the answer would be no I'll take for lunch and I would have to come up with something else for dinner. last night made my guys some large chicken legs done in the oven in BBQ sauce, scalloped potatoes ( with cheese!) and asparagus.
This morning I used one long bread loaf pan to make a gluten free lasagna. Used diluted unsalted tomato paste and herbs for my sauce, went sparingly on the mozzarella ( 8 oz total ) and thin slices of skinless/boneless chix breasts that I previously par sauteed, lots of mushrooms too! This will be 5 servings ( I am the only one that will be having this, may freeze a few )
