Happy Tibb's Eve from Newfoundland! Its super stormy here today and with all the going ons with Covid most things are closed or canceled! I canceled all my celebrations including a Gingerbread House Night contest (for adults!) and Tibb's Eve celebrations, etc. This evening will be just a few nibblers & appetizers, etc and lots of drinky drink!

Keeping it simple tonight as we will be eating plenty over the next few days. I will have baked beans on toast and hubs will have a large salad.

Change in plans last night, I was not feeling well and Mom tweaked her knee so I took her to her booster shot, so she ordered dinner.
That mean's tonight will be Shepherd's Pie, it has taken me almost all morning (still not feeling my best), but it is prepped just need to put it in a dish and top with leftover potatoes.
Dinner Rolls are not happening.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

My entire life I've always eaten fish on Christmas Eve and then at midnight a pork fry lol....so this evening will be cod, I'm making a hash brown casserole, and always molasses raisin bread, boiled potatoes, various canned pickles, cheese, cookies, etc, etc

I am blessed with a son that loves to cook. He makes Beef Wellington for Christmas dinner and has done so since he was 15. It was another amazing meal.
Friends don't let real friends pay full price.

I really wanted Pasta but we were out of sauce and I did not want to make sauce yesterday. So this morning I got a batch simmering on the stove.

@lilo0003 what a blessing indeed! Your DS making up that wonderful meal is a tradition anyone could embrace!
Last night, the minute DH left with DS#1 and DD to take them back to their respective apartments ( loaded down with so many gifts and food ) I got busy making one of his all time favourite soups. ( Butternut squash soup )
Seeing as DS#2 did up an array of roasted veggies for the 25th , I grabbed enough slabs of the butternut pieces to dice up.
I had leftover fresh sage and rosemary which are in the ingredients list, some veggie broth and diced green onions, garlic, ginger paste...It was made up so quickly because of the squash already being cooked.
When he got home he could smell it right away and said that was perfect because he was a bit cold. Comfort soup to the rescue! I blended my serving up, he eats his chunly style...lol.

Today will be ham, potatoes romanoff, veggies, ham dip with homemade bread etc. Xmas baking and chocolates for dessert-time to consume some of these sweets!

Tonight we're making a homemade pizza. We tried a new recipe for the dough in the breadmaker.... it puffed up nicely
