Homemade Chicken Tenders with Air Fryer Potato Wedges and a Ceasar Salad

Appears to have extra limbs. We just bought a few extra legs and wings and tucked them into the roast pan because we did not want fist fights over who gets the drumsticks!




The soup was made last night from the carcass ( DH did all of that ) and it can last us a few days, just not sure what to cook up this week for their work meals.

Last night I made Dump and go Instant Pot Alfredo and added Sauteed Chicken, Mushrooms & Broccoli. On the side I made Cheesy Garlic Naan, since I did not attend Thanksgiving as my Mom was under the weather I now have a Costco package of Naan to use up.

Last night I Shake 'N Baked up 4 large boneless pork loin chops for the guys work dinners, added some of the leftover squashes, mashed potatoes and roasted up more carrots.
I decided to have another bowl of DH's turkey soup he had made on Monday. Mmmm, it's nearly all gone already!

BLSL chicken and grilled broccoli, cauliflower, onions and mushrooms on the bbq.

DH and DS got chatting at work and decided they want to tackle making homemade meatballs to go with a batch of spaghetti. I guess DH forgot all about him asking me to pick up chicken parts because he wanted to make more soup. I informed him that they will be making BOTH since I already bought the chicken. I'll be watching baseball and hockey, they can call me when everything is cooked and ready to eat! lol!!!

Going to make Homemade Crispy Chicken Sandwiches with Homemade Poutine using Oven Fries.

Sandwiches will be made using a homemade Seasoned Flour Breading (Not a huge fan of bread crumbs, yep, I am weird). Poutine will be Oven Fries with Cheddar and Homemade Beef Gravy.

update on the chicken soup and the spaghetti and meatballs. Both are done! Wow, dinner last night was very delicious but since I had gotten my 5th covid ( bi-valent ) shot earlier in the day I've been really achy all over and had almost no appetite. First real side effects I've gotten from having any of the shots.

It was fun making these meatballs together though. Thrilled that it came out to exactly 50 of them.

Tonight will be Homemade Pizza with Salad. Probably Caesar Salad as my cucumbers went bad on me and we do not really have any other Salad Veggies on hand.

Change in plans for dinner tonight, I had taken out Chicken but today was a day, all of a sudden I looked down and it was 5:30 and I had not started dinner so quick pivot.

We are now having Nachos with melted Cheese, Homemade Taco meat pulled from the freezer and toppings of choice.

we are working our way through those 50 homemade meatballs along with the spaghetti and the homemade chicken/rice/and a million veggies soup. What's the word I am looking for?

I have to get back on track with dinners and just eating in general, the last couple of weeks have not been good.

Tonight I am making Garlic Butter Chicken Bites with Baked Mushroom Rice & Roasted Lemon Asparagus
