My jiggs dinner turned out really good yesterday and luckily there are lots of leftover (I cooked way too much..lol) so I like to cut up everything into bite size pieces and cook in a frying pan and "hash" it all up...sometimes I think the leftover hash is better than the original meal!

Just back from grocery shopping so now I know my menu for tonight. Roast chicken, dressing, corn on the cob, yam, broccoli and watermelon for dessert.

shopped at 5 stores beginning at 7:00 a.m. Managed to roast 2 whole chickens up while the pressure cooker was tenderizing the various cuts of beef I found marked down ( woot! woot! ) Once it was nice and tender and I added it to many things.
Got the barley boiling for DH's beef and barley soup. Made a simple beef and broccoli dish, a larger stir fry with beef, bokchoy, water chestnuts, onion, carrot, celery, red pepper and my GF fake soya sauce. Hmmmm, common word in there BEEF!
Tried the Shirataki noodles ( fettuccine ones ) for the first time ever! These are only 20 calories a serving!!
Was really glad a member told me RINSE them completely first to get that funky smell off and then pat dry before cooking!

I put pork sirloin chops into my crockpot overnight, having basmati rice with it. I am not having any, I went out to lunch and had a big meal there and am not hungry!

Rainy day here today so not sure if bbqing is in the plan. Still in bed lol so should get up and figure out the day/ dinner. Potatoes, chicken, ceaser salad and veggie I think. Have all on hand so think that is the plan.

today is going to be a naughty, munchie day...nachos baked in the oven with ground beef, onion, mushroom, yellow pepper, lots of melted cheese, topped with sour cream & salsa...honey garlic chicken wings...I have a fresh baguette ready to be sliced and toasted with butter & garlic and topped with Artichoke & Asiago dip..AND..to top it off, I p/u a few+ small tubs of those free ice cream at NO Frills (breyers $0.97-$1.00 coupon), so will put a generous scoop between 2 farmer market oatmeal, chocolate chip cookies to make an ice cream sandwich

I made chicken kabobs, using this recipe:

Instead of breasts I used thighs that I'd boned. I use thighs for everything chicken, much moister than breasts. I also used more peanut butter, added honey in place of some of the brown sugar. Marinated for an hour or so, threaded onto wooded skewers (soaked in water for an hour or so so they will not catch on fire), then put on the bbq. They were AWESOME, DH and DS loved them too. Served with rice and veggies.

All of the above sound amazeballs and yummy!
I've got potato wedges roasting in the oven, in a bit of oil, seasoned with Italian herb mix, garlic, onion, s+p, and some beef bouillon powder. Will cook seasoned boneless pork bites from our butcher (they are v. good!), and have a salad as well.

BBQ today!! Ribs for a change..will boil them out first to save some time and then grill over a slow heat and slather with Diana's rib sauce until they are a little charred and all caramelized and sticky...I'm having sticky ribs!!..and rice.. R&R!!
