Here ya go, Gottalovefreebies!
Shepherd's Pie
Prepare ahead of time your favourite mashed potato recipe...make it fluffy, use shredded cheese if you wish, or cream cheese, whatever you please. Set aside and keep warm.
Saute 1lb of lean ground beef (or chicken if you prefer), breaking it up and browning slightly. Remove the meat to a dish. Saute 1 large white onion in the drippings, adding a little more olive oil if needed, or some water to frizzle them until soft. Some people also saute diced celery at this point, too. Add the meat back in and stir together.
In a baking dish, plop the meat mixture and spread evenly.
Here's where it might vary: traditionalists use canned or frozen peas and carrots, others top that up with a can of condensed tomato/rice soup, or any veggies you prefer, and spread evenly over the meat mixture.
Spread the whole thing over with your mashed potatoes, dollop some butter over it all...shred some more cheese if you prefer, and if you like a dusting of bread crumbs, do that,too!
See? Easy-peasey! It's whatever you like...but that's the main gist of a shepherd's pie. I imagine originally it might have been made with lamb, but now it's generally ground beef.

Onion petals?! Oohhhh this might help my cravings for those blooming onion thingies which we do not have in this town!
We've got another evening of butternut squash soup and Italian bread...I could eat this stuff every day (two days isn't enough, lol!). We also froze a lot for out-of-town company the evening they arrive, to have before dinner....

Was going to make meatloaf.. er... forgot to throw the frozen meat into the fridge last night.. so erm.. Guess it's fed for yourself night... again... wow.. think that's been 6 nights in a row hahaha.

tonight we are having a X-mas party for all the ''old people'' that used to work together. We will be having fondue. It should be fun. People I haven't seen in ages!! Some of us, like me, just moved out and a bunch retired. Lots of fun to come!! we can't come home too late because we are having friends over for brunch in the morning. I love party season!!! LOL
