Tonight will be Steak Sandwiches with Mushrooms & Onions and I am going to try my hand at Smashed Baked Potatoes. Will probably also make a Salad to go with it.

@lizzie bargain I did not make the Beef Empanadas just yet because I used up all the thawed puff pastry on the other 3 recipes...lol! Some new pastry is now thawing, so maybe tonight I'll get new energy to make them up......or tomorrow.
Here is the recipe I found online.
Now I must say I always bought Filipino empanadas when I was still working ( SO delicious ) and theirs had potato filling with whatever traditional spices they use.
These have no spuds in them, but they do have raisins?? and olives?? Weird huh?

Here are my 3 Puff pastry creations...omg! the spicy ham and pineapple things were the most delicious and sneaky the way the heat of the crushed red pepper flakes sneaked up on ya!

Im new to air fryer recipes (granddaughter gave me the Ninja Foodie at Christmas). Ive made a few things like french fries, greek potatoes and fried chicken with just salt and pepper. Now i would like to know if i can make fried chicken in the air fryer using a fried chicken recipe which includes dipping the chicken in egg/flour mixture and spices. I have a copy-cay KFC recipe for fried chicken i would like to try. So can i do that in the air-fryer.
Last night's supper was different. I wanted to make a meatloaf but i didnt realize i defrosted minced pork. I made the mince pork like i would a regular meatloaf but added lots of garlic. It turned out pretty good and i roasted the potatoes instead of mashing. Hubby said it was very good. Me..... im undecided. Oh and we had mixed frozen fruit for dessert.

Baked up just this many of the Beef Empanadas, the rest are getting solid in the freezer, then will be bagged.

Leftover homemade lasagna. DH is loving the homemade meals versus a frozen lasagna from the store. Definitely going to try the Beef Empanadas @walkonby , raisins on my list for this week.

making beef stew later /dumplings (I buy clods of beef from a local butcher and cut them up into roasts for the slow cooker and stew meat. Its very good!)
