Plan B Dinner
Pork tenderloin, rice with peppers & garlic & green beans.
(this is due to a dh unplugging the slow cooker to make toast & not plugging it back in)

i made a roast yesterday and had planned shaving what was leftover and turning it into a beef dip sandwich but man-oh-man that roast was tough (theres nothing worse than spending $14 on a roast/steak and for it to be tough!!) so now i dont know.... maybe pasta with sausages mushrooms,onions, peppers and garlic baked in the oven with shredded cheese.

I have been slacking in the meal dept for 2 weeks since I have been super sick
Now that I'm feeling better I am making up for it
In the last few days I made a roast chicken dinner,hot and sour soup, chicken noodle soup, and last night I made a prime rib dinner with garlic smashed taters, roasted corn (casue I'm not a pea fan), pan dripping gravyand a delish horseradish cream
Now it's leftoverslol
BTW,Lynn Thanks for the recipe. I am going to save that for later this week or most likley next. Sounds YUMMY

Tonight's dinner will be Steak, Baked Potato and a veggie (either brocolli, cauliflower, carrot mix or green and yellow beans with baby carrots, I have both in the freezer all depends what we feel like tonight).

tonights dinner is 2 porc loin roasts with sliced patatoes that were cooked with the roasts with a package of Europes Best Tuscan style veggies with a black peppercorn gravy yummy........I WISH I HAD SOME BUNS (lol)
AND leftover cake for dessert2019 is the year that we continue to save before we buy!!!

Too funny, Loocie! Your story reminds me of the time I sent my husband downstairs to get something from the freezer. Well, he got the item, but he also left a whole turkey on the ground to thaw - I discovered it the next day. Well, we ended up having turkey two weeks in a row that month.

Wow! When you make up for lost time, you're not kidding! lol!
I'd love to hear your thoughts on that recipe....we have leftovers tonight and I'm salivating thinking about it! Double the sauce, cook in a covered pan then uncover for the last few minutes to thicken the sauce if you like it like that. But the flavour is incredible. Btw...when hubby came home from babysitting our grandson, he thought I had used Chinese Five Spice, which we love...it smells just like it!

Recipe: Cheesecake Apple Pie in a Jar
When two kinds of all time favorite desserts — apple pie and cheese cake — are "rolled into one" and baked in mini jars, you have this beyond delicious dessert: cheesecake apple surprise mini pie in a jar. Yes, beneath the pie crust and apple pie filling, there is a "surprise": a layer of cheesecake.
Presented with a rustic and homey style, these baked desserts in jars couldn't be more charming.
Apple Surprise Mini Pies

INGREDIENTS
1 3/4 C. (1 package) graham crackers
1/3 C. butter, melted
24 oz. (3 pkg) Philadelphia Cream Cheese
3/4 C. sweetened condensed milk
2/3 C. white sugar
2 eggs
2 Tbsp. lemon juice
2 tsp. vanilla extract
3 cans apple pie filling
2 Pillsbury Refrigerated Pie Crusts
12 half pint canning jars or ramekins
Drinking glass (a little larger than your jar lids), to cut out crust
DIRECTIONS
Place graham crackers in Ziploc bag and crush.
Pour melted butter into baggie with graham crackers and shake to mix well. Place 2 heaping tablespoons of graham cracker mixture into bottom of a half pint jar and carefully spread around.
For cheesecake layer, beat cream cheese and sweetened condensed milk until smooth. Add sugar, eggs, vanilla, and lemon juice and mix well. Place 1/3 c. of cream cheese mixture into each jar.
Fill jars to the top with apple pie filling (about 1/2 C).
Unroll pie crust. Find a drinking glass or round cookie cutter that is about 1/2" larger than your jar lid and cut out 4 circles. Re-roll remaining dough and cut out 2 more circles. Repeat with other pie crust. If desired, cut small slits or a little shape in the middle of your crust.
Place one cutout crust on each jar and pinch edges to resemble a pie crust. Finish with a light dusting of white sugar.
Place on a cookie sheet (just in case any of them leak, you don't want to clean that out of your oven) and bake at 350 degrees for 35-40 minutes until done.

Was told not to cook anything for DH for when he gets home late after work because he is being sympathetic to the fact I cannot eat or drink past midnight ( tests tomorrow) and he felt it would be cruel for me to be cooking him something. Aw sometimes he scores big points.

Spagetthi with ground chicken and cheese;french bread and lemon tart with a salad of fruits( strawberries;blackberry;cantaloup,pineapple and kiwis) ;fruits was a great price this week
And I should have more than 3 rainchecks for the 1$ blackberry they receive a tons of them today...The goal is to live day by day not to much thinking hahaha !!!!
I love to save money!!! Frugal life hahaah !!!
