Leftovers of what I like to call Asian Goodness.
Teriyaki chicken baked, teriyaki rice with carrot, onion, broc and a splash of soya sauce cooked in a pot. Cut up chicken into small bits, dice with VH teriyaki sauce and throw in pot with rice mixture. Delish.

I'm not really a fan of roasted peppers but, the pic is enough to make me want to try this. Looks awesome!

Last night we had potato salad with grilled turkey breast and pickles. It was such a nice change having a "summery" meal. This evening we had roasted salmon with steamed carrots, grilled zucchini and onions, and basmati rice. I marinated the salmon in butter, chopped garlic, dijon mustard, and lemon juice.
The brined/roast chicken was such a hit last week that I'll be making it again tomorrow. It's marinating in the fridge overnight and I'll be serving it with grilled sweet potatoes and turnips, and a green salad.~RRLF $0.75 Organic Meadow, $1 Almond Fresh~

Last night was Nachos around 8 pm, really good but so not a good idea when you need to go to bed early to go to work the next day.
Tonight not sure yet not sure if we will be home or out yet so we will have to wait and see what happens.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Chile, Garlic Toast and a Tossed Salad for tonight. . The next day I love having a large plate of Tossed Salad and I put the Chile on top ( heated up) with a big spoonful of Sour Cream. I know....I know...family members wondered about this untill some tried it. Now they all talk about how great it taste. One never knows till on tries it

I just made up a large pan of meat lasagna with peppers, mushrooms and spinach in it ( it was time to use up what was in the crisper!)-used ricotta and mozzarella cheese on sale this week at No Frills. I will admit this is for my husband and kids who are out volunteering today at our school Christmas Faire. I am going to stay over at my friends down in High River tonight and help her pack boxes and we will play Scrabble. She and her daughter were rescued by helicopter in the June floods and they have accepted a govt buyout and will move to a new house in 3 weeks. So a bit of a "ladies night" under the guise of packing as her hubby is away on a business trip and mine will be busy with our kids.
