Chinese take out for DH's birthday with blueberry cheesecake for dessert. Totally off the radar in terms of caloric intake for the day (I'm trying to slim up a bit)...but geez. Chinese take out and cheesecake? Like....that's what my heaven is made of! Forget the philly cream cheese and the cute guy feeding it to you like in those commercials. Gimme chinese take out and cheesecake! Now THAT is heaven!

mmmm. nom nom nom. So gooooood.

the extra laps I will need to run are going to suck large...but I still think it will have been worth it.

( or at least, someone please remind me of that tomorrow morning when I'm sweatin' and panting and wishing the finish line was sooner)

I am glad that he enjoys cooking. Someday he will make a good husband to the right girl, as he is still getting over one of those crushing break ups. I am one proud Momma. My older son's idea of cooking is making kraft dinner or grilled cheese.

My boys are 24 & 27 & for the most part they are very decent young men.

dh is in the dog house for not getting anything done over the weekend....dinner for him will be.....

    Guilt trip ala Loocie.
You can send the cooking son to me I just moved to TO and while I don't mind cooking, it would be nice to have someone cook for me once in awhile Plus I prefer baking to cooking! So we would make an awesome duo LOL! He could cook and I could bake and life would be made!

I ended up doing frozen pizza for supper (buitoni brand since it was on sale and I had coupons). It was pretty good actually for a boxed pizza. Not as good as the big chinese feast I had planned on walking to China Town to get supplies for, but it worked since it was pouring rain. Chinese food is tomorrow night now!

Last night was a one huge roaster meal - cut up chicken pieces, potatoes, carrots, celery, onions doused with a variety of spices and oven roasted. Yum-o-rama!

My quiche recipe - makes one pie, or 15 to 17 tarts

    Whisk together - 3 eggs
    1 cup milk
    salt and pepper

    add 1 cup shredded cheese
you can also add 1 cup sauteed bacon or ham pieces, and/or onions

Fill an unbaked pie shell, or divide into tart shells (unsweetened)
Put 1/4 cup shredded cheese on top

Bake at 350 degrees til knife inserted comes out clean
    For pie, about 45 minutes
For tarts, maybe 20 minutes (sorry I don't remember!)

Cool a bit before cutting pie.

(I make this most often without meat, and when I didn't have any brick cheese, I've also made it with Cheez Whiz and it tasted really good!)

Tonights dinner is going to be lasagna. Since I'm making a batch of bread today, I'll make a lasagna too and turn one of the loaves into a roasted garlic and cheese loaf. Everything into the oven and easy. Just the type of dinner I like Of coarse I;ll have to make a greek salad to go along with it, with lots of feta!!!

Thank you!!! I don't eat a lot of meat so I think just the cheese and maybe some veggies or onions would be good in it. When I get my toaster oven in Sept I will make the tarts. I hate cooking with this gas stove we have at the apartment. I'm doing as little baking as possible until I have my toaster oven!

I am however heating up leftover pizza in the oven right now...I hate the gas smell. It kind of scares me a bit...Not used to these kinds of stoves.
I was supposed to go to China Town for chinese food supplies but I am waiting for a phone call to go into work so am staying put and eating up leftovers. I do not want to waste food in this house! It's hard because I'm the only one cooking and eating. I'm used to living at home with four other people eating what is around in the fridge too so my fridge looks empty, yet I feel like I can't eat things fast enough!

Trying to incorporate another grain in the diet ( no gluten variety) , well Quinoa is that a grain? I had that with sauteed chicken breast, gai lan, red peppers, mushroom, onions and 1 tsp of hemp hearts and chia seeds, sprinkled in. Awesome.
Best part is the whole pan was all for me!! ( at least 3-4 servings) as No one else here would touch it, lol
