I made that marinade for steak that Lynn had talked about...hmmm...not really to my taste. It calls for 1/3 cup of lemon juice, which I found to be quite overpowering.
Steak served with potatoes, peas, fresh tomatoes, garlic bread and grilled zucchini. The zucchini was the favourite thing on my plate.

This has been awesome. food. week. at my place.
Monday was one of my all-time favourites: cooked collard greens with onions, a wee daub of butter and a bit of grated sharp cheddar, topped with two eggs over easy and with a side of fresh, homemade cornbread. It was super fun to make because my DH got excited when he saw me buying collard greens and cornmeal at the FreshCo this week and guessed what was in store. I aim to please
Last night was dinner out at an Indian place with a dear friend of mine who's moving far, far away to Alberta. We ate spiced black lentils, mushoom saag (pureed spinach with mushrooms) and a lamb garlic curry with some naan. It was really nice as it wasn't as buttery/creamy as most Indian restaurants and we didn't leave feeling bloated
Tonight I need to cook something that will give DH leftovers for tomorrow's work lunch as somehow the entire batch of corn muffins are already gone!!(geez, who woulda thought that would happen so fast?!?) I had thought of doing soup, and am still thinking that that might be the way to go. I have some frozen broth that would probably be great with onion, carrots, celery, barley, green lentils, and mushrooms. Still no idea on what to serve with it, but some garlic bread does come to mind!

tonight is I dont want to cook night so veggie burgers with sweet potatoes and a nice big red leaf salad. I will prob bbq the red peppers I have and zucchini as well

leftover cabbage casserole with ground turkey, sauteed zuchinis. we went apple picking this past weekend so dessert was leftover apple crisp.

Tonight is a creation a la VeeVee lol I will make tofu scramble, add spinach, onions, lots of mushrooms, put that inside phylo pastry and put some home made garlic sauce then roll em up and bake. I hope they turn out lol
