What's For Dinner?

Beautiful sunny day here so I'm thinking steak on the BBW tonight! With baked potato and ceaser salad and grilled asparagus (just need to pick up asparagus $1.97LB at FL)

Tonight I'm making hoisin chicken with noodles.

Had to come up with something creative for a meatless meal, and our son was coming for supper.
Made a casserole with fake crab I shredded, added chopped spinach - then the sauce was an onion, garlic and shredded carrot base, made a white sauce with milk and broth, mixed into the crab and spinach, topped with crushed cornflakes mixed with margarine, baked to warm through.
It was awesome, if I do say so myself. Served with chopped roasted potatoes and onions with Italian spice.
Had bought green leaf lettuce earlier in the week - and it was like nothing I had before, not really good in a regular salad because of the texture, leaves are kind of thick and hard, do you know what I mean? So I cut it chiffonade-style, added minced onion and shredded carrot, cut up two hard-boiled eggs, made a sweet dressing and it was a great salad.

It's mini date night so dh and I are going out to dinner. Just not sure where yet.

I had leftover potato soup in the fridge, and three cooked chicken thighs. So we had the soup and with the chicken I made chicken quesadillas with cheese, a pinch of taco seasoning (which I make myself from this recipe http://skinnyms.com/skinny-ms-taco-seasoning/), and grilled on my Cuisinart Griddler that I got from Amazon recently. I put onions, mushrooms and peppers in DH's and mine, and spritzed with olive oil before grilling. They came out nice and crispy, served with salsa and sour cream.

I made garlic ribs, mashed potatoes, coleslaw. LOL, I thought I made plenty so our son could have enough to take home with him for another meal, but there are two tiny ribs left, so I'll just send him home with potatoes...
