    around noon today I sauteed 2 huge onions till they were nearly caramelized, then added a big slab of lightly floured fresh baby beef liver to the pan. Cooked all crispy on the outside and tender in the middle....Agh!! I was in heaven. THAT was my only meal today other than my huge green smoothie this morning. Everyone else picked their choices from lasagna, fish, stuffed peppers and the veggie sides. I told them I drank my veggies in the morning, lol.

    I made baked salmnon with coconut crust with Jasmine rice and a simple spicy veggie stir fry...It was yummy.

    kitchen tap ensemble ( a 4 piece ordeal ) is being replaced " whenever ". DH needs to get a hold of a 1 1/2" flat plumbers wrench to continue ( ???), so......since the other ensemble was all pulled out dinner is on hold till further notice.

    I was going to grill burgers since it's actually sunny and not snowing. But while in Costco they had 'St. Louis Style' ribs on sale that were already seasoned. I've never tried them before, and am a bit wary of pre-seasoned things (I am not a fan of really salty meats), but it was a good deal, DH and DS love ribs, so ribs it was!

    I did them in the oven for about two hours wrapped tightly in foil with some onions. Then I heated the grill, added some BBQ sauce (Kraft is all I had, not my fave but c'est la vie) and got them nice and browned.

    They were pretty good! Had salad and baked potato with it. Bought a big bag of romaine at Costco too - we have a hard time using them all up, but it's only about $4 for 6 of them. Looks like we'll be eating lots of salad!

    Tonight we are bbqing chicken with leftover potatoes from last night (red potatoes done in oven with oil, spices, parmasen cheese and green onion. So good). Fresh asparagus and ceaser salad with homemade dressing.

    No idea. Dh isn't home and LO hasn't been eating much for the last few days. I have a few random leftovers in the fridge and just bought some fresh fruit this morning. I think I might be "grazing" this evening.

    Tonight for dinner we had sauteed Onions, Mushrooms and Carrots with thinly sliced flank steak simmer in beef broth and added sour cream to thicken. This was served over egg noodles

    It was a mini marathon cook this a.m. Wonder how long the stuff will last? Made 9 x12 pan of GF lasagna, 8 x 11 pan of chicken Farmer John ( it is what I call Parmesan), 9 x big bun style homemade burgers, 3 x large skns/bnls chicken breasts, split and stuffed with GF stuffing/cranberries, coated and baked. Veggies are broccoli, beets and baked some sweets potatoes and butternut squash up as well.
    Did up enough mean green juice to fill 9 empty Classico jars. Threw one lg. beet and 3 small carrots into the concoction this time to add more sweetness.
    Thanks for letting me vent, oops I mean post about the meals. Sadly I still have plenty of bell peppers/caulifower that I need to " do something with " before they turn on me. Stay tuned....

    i bought ground beef at Costco this week, so I grilled some burgers (even though it seems to be winter again today). I'm a bit disappointed with how much they shrunk, they don't normally do that. Anyhow, did the other rack of ribs this morning too and finished them off on the grill, those will be for lunches and such.
