Mmmmm... Big Mac! and I got a 1/2 price wrap for tomorrow, plus 1/3 a Mac leftover.

Chicken skewers( marinated in soya, honey, lime, cilantro, chili sauce), cilantro/lime basmati rice, cucumber and tomato salad. One of my families favorite dinners.

I usually double this recipe, marinate the chicken for a couple days. I divide the chicken and freeze half for a future meal. Before juicing the limes for the marinate I will zest them over some plastic wrap and save for adding to steamed rice. Lots of citrus flavour in the zest.
I am lucky to live on the west coast so I use my BBQ all "winter" aka rainy season. I have grilled these on a George Forman grill inside, or browning the chicken in a frying pan would work. Grilled jut tastes better IMO.

I was asked to fill in tonight at work for someone in a town an hour away so I told the girls DH will take them to McDonalds for a Friday night treat. I'll grab something on the go in the car - maybe burger king..i haven't had that in years!
When life hands you lemons, make a lemon pie... lemonade will be all like WTH?!?

I honestly have no idea since I'm meeting someone for coffee at 6...Will probably just have a bowl of the turkey soup I made before heading out. Then I will make something else for a late supper when I get back. I have no idea what to make though! I usually eat supper around 6ish and I definitely can't have coffee on an empty stomach or when I'm hungry because it makes me feel ill...

Smothered Chicken with Garlic Pasta, both are new recipes for us. The pasta was good but not a fan of the chicken not that it was bad just not my thing. It was breaded in flour baked topped with provolone cheese which was melted and topped with Spinach and Mushrooms, mom liked it.

Homemade chicken fingers and fresh cut french fries (I love the russet skin, crispy ones) double frying is a must for crispy fries.
I dredge the chicken tenders in seasoned flour, then buttermilk, and last in "lucky j's seasoning" from this recipe.

Fry til golden brown. Then dip in a mixture of franks hot sauce and sweet baby rays honey BBQ sauce.
I usually make extras for reheating the next day lunch or cut up for chicken club wraps.
I have made the chicken and waffles, it is tasty. Waffles are very filling.Last edited by mrsf1sh; Fri, Jan 17th, 2014 at 06:20 PM.
