I've not cooked a darn thing since making up the stuffed peppers/cabbage rolls and chili.
( Just too much immobility and throbbing arthritic pain in my left knee. ) Today was a little better, I woke up with less pain, but walking is still a problem as well as bending the knee. Oh well, I've not got anywhere to go so it's the recliner for now!
Cooking will wait.

I have a couple of peppers I need to use up so decided on One-Pot Chicken Lo-Mein.
Two birds one stone, I use up the peppers, plus something different. Although we have had this recipe before it probably been at least a year since I made it last.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

So…we bought one of those huge Airfryers quite a few years ago. And primarily it is DH who puts the frozen fries in it. But, it wasn’t until my sister told me she had one - and uses it for pretty much everything WITHOUT the round-about that I thought it might come in handy. And it did - tried it out on a tray of chicken breasts today. Took out the paddle - brushed 4 of them with a bit of oil, mayo and spices - put the noisy thing into action ..and presto 25 minutes later (they were fat breasts) I had today’s and 2 other meals ready. Should have tried it on the 3 turkey breasts I picked up 1/2 price at Fortinos last week

Tofu salmon with dilly potatoes. This pic was taken when I made it in the summer since I was too tired, lazy and hungry to take a pic last night.

Last night I cooked up a small tray of Breakfast sized sausages, opened a can of pork 'n beans and had DS make up 2 pouches of Stove Top. I feel ashamed! lol...It's a definite comfort meal, delicious but just made mainly for DH to have a meal to take into work today.
I'll do better over the weekend.

We got inspired by many people and tried a lot of good this week. This was our dinner 2 nights ago. We tried making wontons and made both a soup and fried wontons. We really enjoyed ourselves
