I have a food question. Lately I've taken to slicing thin coins of zucchini along with sliced mushrooms and setting them into a shallow pan of hot oil.
They deep fry up till very brown and quite crispy. Then I lay them between 2 sheets of paper towel to press as much of the oil out.
They now weigh as light as a feather!
So....my question is if I now place these yummy bits onto my food scale and they come up SO light, is that an accurate amount to enter into my caloric totals for the day? ( yes, I am still counting all the calories )
For example before I fry them the zucchini coins might weigh 40 grams, but after cooking it comes to about 8 grams.
I considered entering a scant tsp of EVOO into the caloric chart to account for any oil that IS still in them.
Oh..... I use these fried crispy veg in a wrap, by piling them all on top of a portion of ricotta cheese that is spread onto the Lavash sheet. I roll it up, they are so good!

yesterday I was so tired so after I went to pick my cat at veterinary I just grabbed a subway in my way home .Shared with dad.
I figure it out it will be the best healthier take out.
but no coupon...grr
They release them less often..and that suck!!!
Anyway Chicken ranch bacon with cheddar cheese on a italien cheese herbs bread with a lots of veggies(cucumbers,green pepper,black olives,salad,tomatoes and lots of spinachs) and ranch with south west sauce.The goal is to live day by day not to much thinking hahaha !!!!

today it is vietnamese shrimps spring rolls with lots of veggies too with a sweet and spicy sauce..so good

@cath007 I also couldn't get her video to post up properly when it was from the FB site , but from YouTube it works.
I used Natasha's video as a reference when I made my own rice paper spring rolls.

Air fryer chicken legs, mashed potatoes, gravy and the tomato, Cucumber and Onion marinade. I posted the recipe here before not too long ago.
Also i have to St Jean Baptiste cupcakes. And i made Fresh Fruit Muffins. (strange but it calles for frozen fruit) Anyway they are super good and i will post the recipe here soon.

I made a ramen. I sautéed some broccoli that was on its way out, same with the carrots, fresh mushrooms and garlic and added the spicy spice blend from 2 ramen packs and the better than bullion no chicken chicken stock. Finished off with cubed tofu for more protein and added fresh spinach just as I served. Oh sooooooo good. Spicy but not overpowering and a great use of whatever veg you have on hand. Enough leftovers for Dh’s lunch tomorrow
