I’m using the leftover beyond sausage roll filling I have and make a simple pasta sauce with bucatini and some leftover veggies from the veg platter to make a big salad with the last piece of iceberg lettuce I had in the fridge. Using a Caesar vinaigrette dressing and sourdough buns on the side.

I am blown away at that snack platter that is ALL vegan! @harbie it is so very impressive looking! Bonus that all the items taste really good! Congrats.
DH and I did a shameful early lunch at Mandarin on Monday. But I have no regrets ( yet ) because being early like that it is my most satisfying time to enjoy a meal.
We arrived just after 11:30.
I stuck to my rule of a spoonful of each thing I put on my plate(s). This way I get to taste and enjoy many items without filling up too fast.
California rolls were the exception, had 6! After a while was clear I had to make a choice..... more food or Dessert?
As I returned to our table and placed the dinner plate filled with my choices, I said to DH " this almost looks like a sharing plate doesn't it ? "
He paused and I said " just TRY and take anything ! " ha ha He went up and came back with his 2 fav's an almond cookie and a coconut macaroon.
That meal ended up being our dinner because we were both still full-ish right up till around 9 p.m.Last edited by walkonby; Tue, Jan 3rd, 2023 at 12:52 AM.

DH stunned me. His Tuesday dinner request was to have one of the Butterball frozen " football " things with mashed spuds, cooked carrots, canned turkey gravy, some of my homemade stuffing ( frozen portions to be warmed up ) and pan fried red pepper and snow peas. Yikes...hadn't he had his fill of the fowl at Christmas?
No problem, the football took no effort, 4 hours from frozen in a 325 oven.
We each sipped our last glass of dinner wine with that meal There was more than enough leftovers to make up 2 work meals for the guys as they return to work today. @harbie you also returned to the grind today too eh? Sorry retirement is a bit of a way off for you BUT you'll need no training for it when it arrives.

Chicken stuffed rolls,with a salad...I splurged in a iceberg for 2,88$ and it is a small head...I guess it is still a treat???

Dh got A&W beyond burgers for us. I had a very physical and long day at work plus filling up the car ( diesel is much cheaper but I have a bit of a drive to get there) plus my workout nearly killed me!
Hoping for some inspiration for tonight……….. I have a butternut… hmmmmmmm…….to be continued

Super lazy dinner. Nachos with a massive garden salad. The nachos were actually really good and I only added a little of the browned impossible ground round so it wasn’t greasy.

Cheated last night and had Mary Brown's for dinner. Take-Out once in a while, is not a bad thing just cannot become a habit.

Slow Cooker has been cooking a pork shoulder for 8 hours. Soon done. Will rip it up and make Tacos tonight and then with left overs a chili next day

We are also cheating @SassyAshley . It will be another appetizer style dinner while watching the Leaf game. This time a few extra things will be served.
A 48 piece Asian assortment from WMart, 2 bags of pork/veg pot stickers, chicken spring rolls, and Parmesan bites. Mmmmm
